Tyrolean pie with berries and custard
Preheat the oven to 190 ° C and prepare the mold.
- Beat the egg whites with a pinch of salt.
- When the foam becomes fluffy, add sugar and beat until firm foam.
- Then add the egg yolks one at a time.
- Melt 30 g of butter.
- At this time, in two steps, add 60 g of flour to the beaten eggs.
- Add hot butter last.
- Mix everything, transfer to a baking dish and send to the oven.
- Baking time approx. 20 minutes.
Stir gelatin in cold water.
- 20 minutes have passed and the biscuit is ready.
- Take the biscuit out of the mold and put it on the wire rack, it should cool down.
Biscuit impregnation syrup
- In a saucepan, mix 80 ml of water and 30 g of sugar. Boil.
- When the water has boiled and the sugar has dissolved add 2 tbsp. Mocha liqueur.
- You do not need to add alcohol, although in fact, after a minute of boiling, all alcohol will evaporate, only a pleasant taste will remain.
Berry jelly:
- For this cake, I am using pitted cherries.
- To cover the berries, you can make any jelly of your choice.
- I have lime juice, water and sugar (25:75:30 g).
- Bring the liquid to a boil and dissolve the sugar.
- Dissolve gelatin in this hot syrup.
Custard:
- In a saucepan, mix 40 g sugar and 20 g cornstarch.
- Break one egg here.
- You can add vanilla or vanilla sugar and 200 ml of milk.
- Mix everything so that there are no lumps.
- With constant stirring, bring the mixture to a boil and thicken and boil for 1 minute.
- Cover the cream with cling film in contact with the surface and cool.
- Gently mix butter into the cooled cream.
Assembling the cake:
- You can collect the pie in the ring.
- Lay the sideboard with parchment, put a biscuit inside.
- Saturate the biscuit with syrup.
- Apply the cream on top and smooth it gently.
- Lay the berries on top without moisture, and on top of the cooled jelly.
- When a thin layer is applied, place the cake in the freezer for 10 minutes.
- Pour the rest of the jelly onto the frozen layer.
- At this point, the cake is ready and you can put it in the refrigerator until the top layer hardens.
- Remove the ring and the cake is ready.
