First, let's prepare the cake layers.
Prepare a dry mixture, combine together
- 175 grams or 9 tbsp. flat spoons of wheat flour
- 55 grams or 5 tbsp. cocoa spoons
- 12 grams or 2.5 tsp baking powder for dough
- 2 grams or ΒΌ h. tablespoons of salt
We mix.
The dough is preparing very quickly, so now you need to turn on the oven to heat up to 200 degrees.
- Pour 4 eggs into the bowl
- Pour 120 grams or 6 tbsp. tablespoons without a slide of sugar
- 80 grams or 3 tbsp. sour cream spoons
- 100 grams or half a 200 ml glass of vegetable oil
Stir until smooth, no need to beat.
Sifting, add all the previously prepared dry mixture.
Stir at low speed of the mixer until smooth.
Pour all the dough onto a baking sheet covered with baking paper. We level.
The size of my baking sheet is 39 x 32 cm.
We remove the baked goods in an oven preheated to 200 degrees for 12 - 15 minutes. My cake was baked for 14 minutes.
The baking time will depend on the thickness of the crust you make and the temperature in the oven.
We check the readiness of the cake with a wooden skewer, pierce it, if it is dry, then the cake is ready.
We take the cake out of the oven and let it cool.
Put the cooled crust on the parchment paper with the top side down, and remove the parchment paper on which it was baked.
Cut the cake around the edge. The clippings can be crushed and sprinkled over the sides of the cake when decorating the cake. If you do not plan to sprinkle the sides with crumbs, then you can just eat them, they are delicious on their own.
Divide the finished cake into 4 parts.
I will soak the cakes.
For impregnation, I boiled syrup from 100 grams of water and 50 grams - that's 2.5 tbsp. tablespoons of sugar. Brought to a boil, boiled for 2 minutes and cooled.
I add 20 grams to the syrup - this is 2 tbsp. spoons of brandy. Alcohol is optional, you do not need to add.
Soak the cakes evenly with all the impregnation.
We leave the cakes to soak on the table, while we prepare the cream ourselves.
Put in a bowl 100 grams or 4 tbsp. sour cream spoons
400 grams of soft cottage cheese without grains. Such cottage cheese is very easy to make from kefir.

Sift 55 grams or 5 tbsp. cocoa spoons
Add 250 grams of condensed milk
We mix.
Put the first cake on a plate.
We set the shape if you will shape the cake in the shape.
Visually divide the cream into 3 parts and coat the cake with 1/3 of the cream.
- Cover with the second cake layer, slightly press down
- We coat with the next 1/3 of the cream
- Cover with the third cake. We also slightly press down
- We coat the cake with the remaining cream
- Cover with the fourth cake
Set aside and prepare the icing.
Add 40 grams or 4 tablespoons to 60 grams of butter. spoons of milk.
Heat in a microwave oven or on a stove until hot.
Pour 100 grams of chopped chocolate with a cocoa content of 50% into hot milk with butter.
Pour so that the chocolate is completely covered with milk.
Let's wait a couple of minutes for the chocolate to melt.
And mix everything well with a whisk until smooth.
Fill the cake with icing.
Let the glaze freeze and serve.

The density of the cream can be adjusted depending on what kind of sour cream you use, if the sour cream is not thick, then 100 grams of sour cream per 400 grams of cottage cheese is enough.
If your sour cream is fat and thick, then you can take 200 grams of sour cream and 300 grams of cottage cheese. Curd should be taken soft, without grains. Cottage cheese in the recipe can be replaced with curd cheese or Maskarpone cream cheese.
