The dough cooks very quickly, so you can immediately turn on the oven and heat up to 180 degrees.
Combine 20 grams of potato starch with 50 grams of wheat flour and mix.
Whisk 2 protein, a pinch of salt and 30 grams of powdered sugar until it reaches steady peaks.
Beat 2 yolks and 30 grams of powdered sugar at maximum mixer speed, the yolks should become light and increase in volume.
Combine the protein and yolk masses.
Stir gently with a spatula from bottom to top.
Then in two stages we introduce sifted flour with starch, gently stirring with a spatula from bottom to top.
We spread the dough on a baking sheet covered with baking paper, in the form of sticks.
Sprinkle the cookies generously with powdered sugar.
I put away the baked goods in an oven preheated to 160 - 180 degrees on the middle shelf for about 10 minutes, look at your oven.
Then I turn off the oven and leave the cookies to dry in the slightly open oven for about 15 - 20 minutes.

Eggs - 2 pcs. / net weight of 2 eggs 104 grams /
Powdered sugar - 60 grams
Wheat flour - 50 grams
Potato starch - 20 grams
Salt - pinch
2 tbsp. spoons powdered sugar for sprinkling cookies
