It’s spring outside, the sun is shining, and there’s no way to go out for some fresh air. Of course, this state of affairs does not improve the mood, but nobody forbids us to cook something tasty. I already offered you muffins according to the classic recipe, but since it is now fasting time, and eggs and milk are prohibited, I want to suggest that you do not cook less tasty chocolate muffins / muffins, using instead of classic milk - "not milk", and instead of butter use olive / vegetable.

For 6 cupcakes we need:

  • Flour 90-100 gr.
  • Sugar - 60 gr.
  • Vegetable / olive oil - 50 ml.
  • Cocoa - 100 gr.
  • Oat milk (not milk) - 180-200 ml.
  • Baking powder - 1 table spoon.
  • Bitter chocolate to taste

Pour flour, baking powder, sugar, cocoa into a bowl.

Mix everything thoroughly.

Add vegetable oil to the dry ingredients and mix the contents well.

Add oat milk and stir everything for a long time. There should be no lumps left in the bowl. When adding the oats and milk, do not pour everything out at once.

From the experience of making muffins, I can say that if you pour the milk, then the dough becomes too watery, and when it rises well in the oven, it still falls and sticks to the molds.

For baking, I use foil tins (for residents of Moscow and St. Petersburg, you can buy them in Vkus Vil), or take a special form for cupcakes.

Pour the dough into molds. Do not overfill. The content should be no more than 2/3 of the volume of the mold.

Put a piece of chocolate in each mold (you don't need to put it). And in the oven for 15 minutes.

I specifically want to show what can happen if you add too much dough to the mold - it just runs away and the cake settles in the mold.

If you want chocolate to flow out of the cupcakes when cutting, then the main thing is not to overexpose them in the oven, and then your dessert will turn from ordinary cupcakes into the fondant, but for the fondant to work out, you need to practice several times, and if you have neither the time nor the desire for this, then let the dough stand in the oven for 20-25 minutes at a temperature of 170 degrees, and you will get wonderful muffins / muffins with real chocolate taste.
