5 snacks on the festive table

We recently had a holiday and I really wanted to get away from classic salads, although I have nothing against traditional dishes, however.

The company was small, so I did not implement everything I had planned, but I did prepare something)

This is a general overview, and you can see all the dishes on my page.

First course -DATES WITH CHEESE BLUE AND CREAM

So, today is the date.

For cooking, I needed:

  • Large dates - 250 gr.
  • Brie cheese (with mold) -100 gr.
  • Cream 23% - 100 ml.
  • honey - 15 gr.

At first I bought dates in a bag, but when I opened them I realized that they were too small, although I used them too, so if you can buy large dates, great, no, then use the ones that you could get it.

First you need to remove the seeds from the dates. Make a longitudinal cut with a knife and carefully remove the bone.

Now prepare the filling.

Chop the cheese with a fork.

Mix it with cream until smooth and thick.

Put the filling in the date with a small spoon.

Put it on a platter immediately so that you do not shift the dates with your hands a hundred times.

Drizzle honey over the dates (a few drops for each date.

Insert skewers into each date and place the platter on the table!

2. Bruschetta with salmon

Let's make two versions of bruschetta with salmon. The fish will be in both versions, but it will use a different basis for bread.

  • Baguette - 1 pc.
  • Lightly salted salmon - 300 gr.
  • Cream cheese - 100 gr.
  • Avocado - 1 pc.
  • Butter - 50 gr.
  • Cucumber - 1 pc.

Cut the baguette diagonally into thin slices. Sprinkle them with olive oil and put them in an oven heated to 200 degrees for 3-4 minutes.

While the baguette is in the oven, cut the salmon into thin strips.

Cut the cucumber into slices with a vegetable peeler and twist roses from it.

1. Option - take the baguette out of the oven, rub each piece with garlic. Smear the top with cream cheese (I have mascarpone), then lay the salmon beautifully, put the cucumber.

2. Option - beat avocado and butter in a blender or knead with a fork.

Sprinkle the avocado with lemon juice so that it does not darken. Spread the base on the baguette, put the cucumber and fish on top.

3. Bruschetta with baked eggplant, goat cheese, cashew nuts

Now in many restaurants the uncomplicated bruschetta dish has become popular. Usually bruschetta is served before the main course, but a couple of times with a friend, visiting a restaurant, I ordered it with champagne. When you don't want to eat, but you need something on the table)

Options for its preparation - the sea. The most common variant of bruschetta with salmon, but I recently tried bruschetta with eggplant and I suggest you try it.

As always, everything is done quickly and easily.

For bruschetta with eggplant, we need:

  • Eggplant - 2 pcs.
  • Garlic - 1 head
  • Feta cheese - 100 gr.
  • Pine nuts-50 gr.
  • Arugula for decoration.
  • Olive oil

Pierce two eggplants with a fork in several places and put in the oven, preheated to 200 degrees for 30-40 minutes. Place the head of garlic in the oven with the eggplants wrapped in foil.

While the vegetables are baking, cut the cheese into small pieces or chop.

Fry the nuts in a skillet.

We take the vegetables out of the oven and let them cool.

For bruschetta, it is better to use a chabatta or baguette.

I had a baguette. Cut the baguette diagonally into thin slices, put on a baking sheet and pour a little olive oil over them. We put the baking sheet in an oven preheated to 200 degrees for five minutes.

When the bread is browned, it is ready. Rub a warm baguette with a clove of garlic. The scent will last for the whole apartment.

We free the eggplants from the skin and divide them by hand into long fibers.

Finely chop the baked garlic.

Everything is ready, we begin to collect the bruschetta.

Put some of the eggplant on the baguette slices, sprinkle with baked garlic on top, add feta cheese, pour a little olive oil.

Then sprinkle with nuts and decorate with arugula.

4. Tortilla with sun-dried tomatoes, capers, olives and cream cheese

For several days now I have been telling what was on my festive table. It was my turn to tell you about the appetizer that I cooked for the first time, but it is so easy to prepare that you cannot ruin it.

All you have to do is buy sun-dried tomatoes and capers at the supermarket (I took it from the Metro). I confess that although I have been cooking for a long time, I have never used this set of products anywhere.

Having found everything I needed in a large supermarket, namely:

  • Sun-dried tomatoes - 1 can
  • Capers - 1 can
  • Olives - 1 can
  • Cream cheese (Philadelphia, mascarpone) - 200 gr.
  • Tortilla - 1 pack (4 pcs. packaged)

Cooking time 7-10 minutes. Beauty and deliciousness))) will outshine any expenses.

Spread some cream cheese on the tortilla and spread it with a thin layer.

Put 6-7 tomato slices on top of the cheese, add the capers.

Finely chop the olives and place them on the tortilla. There should be a sufficient amount of filling, but if there is too much of it, you can twist the roll for me, or rather you cannot cut it so that it does not crumble.

We twist a tight roll (several such rolls. Do not forget that we have 4 pieces. tortillas). Put it in the refrigerator for an hour.

After an hour, take out and cut into pieces 2 cm thick.

Insert a skewer into each piece and put it on a dish. It was this version of the tortilla (and there were several of them on the table, I liked it the most).

5. Festively decorated slices on your table

Usually I just fan out the slices. Today I wanted to change the old tradition and share my performance of the cutting design.

There is no mandatory set of products for this dish, because what kind of cuts you buy, this will be your table. This time I did not buy the sausage. I bought:

  • Prosciutto (jamon) -1 pack
  • Balyk - 1 package
  • Bacon - 1 pack

The weight of each package is 100-150 g.

  • Olives for decoration

We also need bell pepper and arugula.

  • Skewers will also be needed.

So,

Cut the pepper into thin strips. Put pepper, arugula on the edge of a piece of meat and roll it up. We fasten it on top with a skewer. The number of rolls depends on the number of guests.

We string another cut on a skewer (you can take several different pieces to make it look more interesting) and decorate with an olive.

Everything is elementary, as usual, but it looks amazing on the dish. Try to beat the slicing this way. You and your guests will be satisfied!
