A funny and interesting fact about snobbery in food: one of the favorite dishes of Kim Jong Il, the father of Kim Jong-un (you know this?) Was... kebab from the "heavenly cow".

Under the code phrase "heavenly cow" passed... A banal donkey. Why is that?

Well, can you imagine how the Shining Star of Paektusan, the Guideline of the Sunbeam, the Sun of the communist future, the Beloved Leader who fully personifies the wonderful appearance that a leader should have (this is just a small part of the titles that the Central Committee of the CPSU of North Korea has approved for him), will be a primitive donkey. A big embarrassment can happen. Here is a heavenly cow for him - just right!

And, by the way, there is nothing unusual about the donkey on the table. Used in many countries. Donkey meat is red, with a specific taste reminiscent of horse meat or beef, only a little sweeter and more tender (I am writing from the words connoisseurs, since I didn’t seem to have tried it myself, consciously I didn’t try it, but maybe where they gave the donkey for a cow, even if not heavenly).

Purely in theory, the love of the Korean dictator for the donkey is understandable: in addition to the fact that he, quite possibly, was delicious, donkey meat is still a healthy alternative to red meat: low in fat and high in squirrel. It is rich in iron, potassium, magnesium, phosphorus and zinc.

The only "but". Firstly, it must be stewed, since the meat is tough enough, and secondly, it must be marinated to fight off a specific smell.

So how did the Koreans prepare it? Moreover, in a barbecue?

I suppose it was a type of bulgogi - "fire meat". Nowadays, bulgogi are cooked in a hot frying pan, but its traditional version is grilled on a wire rack.

So, in general, it can fall under the definition of "kebab" (although it is traditionally made from beef)

If you want to repeat, I found a marinade recipe from one of the Korean chefs in Moscow.

We take:

• Four spoons of soy sauce

• Ten spoons of water

• A couple of tablespoons of ground garlic

• A couple of spoons of sugar

• Four tablespoons of corn (this is important!) Oil

• Two tablespoons of sesame oil (from roasted sesame seeds, it is more aromatic)

• Four spoons of wine (white) or vodka

• A couple of tablespoons of sesame seeds

• Some green onions

• A spoonful of ground black pepper

How we cook:

Cut the meat into thin squares and rectangles. We marinate in this solution and leave for an hour (or more, depending on the density of the meat).

You need to fry on a wire rack, but now, in the twenty-first century, Koreans simplify recipes and then you can do it in a very hot cast-iron pan greased with a little oil.
