My mother loves salads with liver, and she loves this salad especially, so when she comes to visit us, I will definitely prepare this salad for her. Hence the name "For my beloved mother".

Recipe:

Chicken liver -400g.

Onion -1pc.

Potatoes -2 pcs. (200gr)

Carrots -1-2pcs. (200gr)

Pickled or pickled cucumbers -2-3pcs. (200gr)

Green peas -1b.

Mayonnaise - to taste

For homemade mayonnaise:

Vegetable oil -150ml.

Salt -1 / 3 tsp.

Sugar -1 / 2 tsp

Lemon juice -1 tbsp.

Mustard -1 tsp

Egg -1pc.

To begin with, we boil the raw chicken liver, I have 400 grams, I boil in salted water with the addition of bay leaves and black peppercorns, cook for 20 minutes. And boil vegetables, potatoes and carrots. Let's cool down and start. Cut the liver into strips.

Cut pickled or pickled cucumbers into strips all 200g. Cut the onion, you can pickle the onion, you can leave it like this, I pour the onion first to remove the excess bitterness I mix it with boiling water and drain the water and now I immediately fill it with cold water, so the bitterness will disappear and there will be smell.

Let the onion drain from the water. Boiled vegetables, peeled potatoes and carrots, 200 grams each on a coarse grater. We collect the salad. Put potatoes in the first layer, grease with mayonnaise.

I make mayonnaise at home. I pour 150 ml of vegetable oil into a jar, add half a tsp. sugar, 1/3 tsp. salt, 1 tbsp. lemon juice, 1 tsp. L. Mustard, do not mix anything at this stage, break the egg so that the yolk is whole and beat with a submersible blender for 15-20 seconds until the desired density.

Put the liver in the second layer and distribute the onions. Lubricate well with mayonnaise. Put carrots in the third layer, grease with mayonnaise, with the fourth layer cucumbers, grease with mayonnaise. Put canned green peas in the fifth layer, you need to drain the liquid well from it.

The salad is ready, I decorated it with sprigs of parsley and olives, let it brew a little, cool in the refrigerator, you can serve it to the table. Try making a delicious salad.
