Recipe:

Pork ears -6pcs (1.2kg)

Legs - 3 pcs. (600gr)

Salt -1.5 tbsp.

Bay leaf - 3-4 pcs.

A mixture of peas, 10 pcs.

Peppercorns -5 pcs.

Garlic - 6-8 teeth

Sweet paprika -1 / 2 tsp

COOKING METHOD

For cooking, we need 5-6 pork ears, I have a weight of 1,200 kg. I have already said that now I cook meat for jellied meat, brawn, or just for soup in not just pots, but pans in a pressure cooker.

Put pork ears in a saucepan and put 3 legs, weighing 600 grams. Add salt 1.5 tbsp. Put the bay leaf, a mixture of peppercorns and black peppercorns. Fill with water so that the meat disappears into the water.

Close the lid tightly and set to cook. From the moment it boils, I cook for 60 minutes, turn it off and leave it until it cools completely. If there is no such pan, you can cook in a regular pan, it takes about 3 hours in time.

As soon as the pan cools down, open it, there should be a stickiness in the meat like a jelly. Take everything out of the broth and pour 2 ladles of broth into a bowl. Add 6-8 garlic cloves passed through a press to the broth and add half a tsp. sweet paprika. Remove the bones from the leg and divide the meat into parts.

We take a suitable dish, I take a glass baking dish. Pour a couple of spoons of broth on the bottom, put pork ears, put half of the chicken meat in the second layer. Pour a couple of tablespoons of broth with garlic, put the pork ears in the third layer, put the second half of the meat in the fourth layer, fill in the broth, put the pork ears in the fifth layer.

I want to note that we put the whole pig ears without cutting, so they will give a drawing in the cut. Fill with the remaining broth. We close it with cling film, put the load on top and put it in this form in the refrigerator, until it solidifies, I clean it overnight.

In the morning I take it out of the mold, cut it into slices and serve it to the table. It turns out very tasty, I recommend it, you can cut it thinly, the appetizer keeps its shape perfectly.

The weight of such a snack is just over 1.6 kg. I bought pork ears at 125 rubles per kg, chicken legs at 180 rubles per kg. As a result, such a snack cost me 250 rubles per 1.5 kg. Therefore, we can safely attribute such a meat snack to the budget.
