Today I am sharing a recipe for the Ossetian pie or, in another way, Kartofdzhin. I confess you honestly will not be able to resist eating a piece. It turns out incredibly tasty and very satisfying! This requires a little time and a minimum of products. You can experiment with fillings, but for my taste potato filling is the most delicious. By the way, such a cake is baked in the oven for only 10 minutes.
COOKING METHOD
The weight of peeled potatoes is 300 grams, put in a saucepan, add some salt to the water. And cook until tender. And we immediately start preparing the dough. Let's measure out 250 grams of flour, add 1 tsp. incomplete soda and mix with flour. Pour 200 ml of kefir into a bowl, pour in 40 ml of vegetable oil, add half a tsp. salt and 1 tsp. Sahara.
Mix and now add gradually sifted flour with soda. We knead the dough. The dough turns out to be elastic, does not stick to hands, if only slightly. Perhaps I need more flour, I needed an additional 20 grams today. We remove the dough to rest while the filling is being prepared.
Boiled potatoes, drain the liquid, rub 200 grams of cheese on a coarse grater. and now we mash hot potatoes, add grated cheese and be sure to add black pepper.
I want to show you my novelty in the kitchen, an electric mill with illumination, it turns out to be very convenient, the pepper grinds finely and, most importantly, you do not need to use much effort for this. I am absolutely delighted. We mix cheese with potatoes, the filling is ready. I want to note that the dough and filling should be about the same in weight. I have 550 grams of dough, and about 500 grams of filling.
For convenience, it is better to form the cake directly on the baking mat. I have a silicone mat measuring 30 x 40 cm, just fits on a standard baking sheet. Convenient in that it does not slip during use and does not need to be lubricated with oil, 100 percent does not stick to it and it is very easy to clean.
Roll the dough in flour and make a circle with our hands, dust with flour as needed, put the beginning in the middle.
We pinch the dough, as if collecting a bag. Turn it over and knead it with your hands to get a pie about 30 cm in diameter. More details on how I do it mcan be seen in the video below. Put on a baking sheet, add a little milk to the yolk and grease the pie, make an incision in the middle, and bake in a preheated oven at maximum temperature.
I bake at 220 degrees for 10 minutes. The pie is ready, let's give it a little rest and you can cut it, I like to serve it warm when the cheese is still pulling.
But even when cold, it is no less tasty. As I already said, you can experiment with fillings, you can cabbage, minced meat, egg with onions, fish, mushrooms. The pie turns out to be so soft, tasty and appetizing. I confess you honestly will not be able to resist eating a piece.
