Today I want to share a recipe for Turkish dough for pies in the oven, why I don't know Turkish, I already got it with that name.

The elastic dough is pleasant to work with; when working with the dough, you do not need to use additional flour. Most of all I like that the dough can be kneaded and put into the refrigerator and there it can lie and wait for 3-4 days. It is very comfortable. By the way, this dough is great for any oven baked goods, such as homemade pizza, tortillas, pies. If you add more sugar, you can make buns. Today I have cherry pies.

Recipe:

Milk -100ml.

Vegetable oil -60-100 ml.

Mineral water with gas -100ml.

Yeast - 7g.

Flour -350g.

Salt -1 tsp

Sugar -2 tbsp.

For filling:

Frozen cherries -300g.

Potato starch -1 tbsp

Sugar -2 tbsp.

COOKING METHOD

Pour 100 ml of mineral water, 100 ml of warm milk, 60-100 ml of vegetable oil into a bowl. Add 1 tsp. salt, 2 tbsp. Sahara. Add a pack of dry yeast, I have 7 grams in a pack. I recommend taking a proven yeast. If you are using raw yeast, add 15 grams, but first let the yeast stand in the milk with sugar for 10-15 minutes to make sure the yeast works.

Now we gradually add the sifted flour and knead the dough, I need 350 grams of flour. Now we transfer the dough to the table and knead well. The dough is elastic and does not stick to your hands. We put it back in the bowl and leave it in a warm place to rise for 1.5 hours, I put it in the oven and set the temperature there to 50 degrees. Now knead the dough and leave for another 1 hour.

During this time, we will prepare the filling. Take frozen fresh berries 300 grams, about 100 ml of the resulting juice and leave them to defrost. Put the berries in a saucepan, add 2 tbsp. sugar, like sweeter add more.

We put on fire, bring to a boil. Add 1 tsp to the juice. potato starch and mix. Now pour into the boiled cherry. Stir constantly until it thickens. And immediately remove from heat, let the filling cool.

We put the dough on the table, as I said, such a dough does not require additional use of flour.

Divide into 12 parts weighing 50-60 grams.

We take one bun, roll out an oval with a rolling pin. Put the filling on one edge, cover the filling with one edge and press the edges. On the other edge with a knife we ​​make 6-7 cuts. We cover the pie and fix it. We bend the edges slightly.. (you can see how I shape the pies in my video below at 2:05 minutes)

Put on a baking sheet and let the pies stand for about 20 minutes.
We put in the oven and bake at 180 degrees for 20 minutes or navigate by your oven.

From this amount of dough, I get 1 baking sheet of pies, if you want to cook more, then I recommend multiplying all the ingredients by 2. If the dough even remains, you can put it in the refrigerator and then when you need to make pizza, for example.
For those who want to make pies from lean dough, you can add 200 ml of mineral water instead of milk.
