Today I would like to share a recipe for special salad Olivier. This is the most delicious option for my taste. It is special because fried chicken breast is added to the salad, which makes it taste special.

Recipe:
Chicken fillet -300-400gr.
Salt -1 / 2 tsp.
Black pepper - to taste
Potatoes -3pcs.
Carrots -1pc.
Fresh cucumber -1pc. (or pickled)
Eggs -3 pcs.
Green peas -1can
Green onions - to taste
Mayonnaise - to taste
COOKING METHOD
First, boil vegetables, 3 small potatoes and 1 carrot. It's all at your discretion, you can boil potatoes in their skins, but I like the taste of potatoes better when they are cooked peeled.
Boil 3 eggs in a ladle, I sprinkle the eggs with salt, then if they even burst, they will not flow out.
Now let's move on to the chicken breast.
I have a chicken breast weight of 400 grams, cut into cubes, take a frying pan, pour a little vegetable oil, put the meat, as the meat begins to secrete liquid, add salt, black pepper, mix, close the lid and cook until evaporation liquids. Now remove the lid and fry the meat until light golden brown. Remove from heat and let cool.
Boiled potatoes, boiled carrots, cut eggs into cubes. We take one large fresh cucumber and cut it into cubes, you can take a pickled cucumber, which is also very tasty.
We collect the salad, put potatoes, carrots, eggs, meat, cucumber in a bowl, drain the liquid from the green peas and add to the salad. We fill with mayonnaise. I dress with homemade mayonnaise.

Chop the green onions and add to the salad. We mix everything.
The salad is ready, put it in a salad bowl, I sprinkle it with chopped fresh cucumber and dill sprigs on top.
Our family loves this version of Olivier salad most of all, so I cook this way for the New Year's table.
