I show you how to make raspberry cream Kurd, which can be spread on bread and used as a cake cream.
This summer I loved making berry creams. In general, such a cream is usually called Kurdish, but this word is not familiar to everyone. Kurd is essentially a fruit juice-based custard. I already shared the recipe for a Kurdish red currant, and now it's the turn of the raspberry version.
Besides the fact that the Kurd can simply be spread on bread and eaten over a cup of tea, it can be used as a cake filling or a base for cream or mousse.

Step by step recipe on how to cook raspberry Kurd
Ingredients:
- Sugar 160 g
- Cream 33% 50 g
- Puree / raspberry juice 100 g
- Lemon juice 20 g
- Zest of half a lemon
- Starch 8 g
- Yolks 105 g (~ 5-6 eggs)
- Butter 100 g (room temperature)
I rub raspberries through Emanuel (a machine for grating berries and fruits) to make mashed potatoes and immediately get rid of the seeds. Both fresh berries and frozen ones will do (just defrost them first).
Raspberry puree, cream, juice and lemon zest are sent to a saucepan and put on medium heat. At first it may seem like the cream is curdling, but after heating it will be fine.
While the mass is heating up, in a separate container I mix the sugar, starch and yolks until smooth.
When the mass warms up to about 80 ° C, remove it from the heat and pour it into the egg mixture in a thin stream with constant stirring. Pour back into a saucepan and put on fire.
I bring the mass to a boil and boil for 1-2 minutes until thickened. I filter it through a sieve to get rid of the lemon zest and "cooked" pieces of egg white.
I add butter and punch with an immersion blender until smooth. Let the Kurd cool completely and pour it into the jars. Let's show what I did and tell you how to store a Kurd.
How to store a Kurd
Since this is not jam or jam, but a product that contains eggs and butter, it should be stored in the refrigerator. I do not recommend leaving it for a long time, but it is kept quiet for 2 weeks.
