I discovered in a Soviet book an unusual dessert that I had never encountered before.
In my mother-in-law's library I found a 1939 “Book about tasty and healthy food”. The book has managed to remain in good condition. Moreover, it is clear that the book was actively used.
I decided to see what interesting things can be made from apples, and found a new dessert for myself - SAMBUK. Not a sambuca alcoholic drink, but SAMBUK. I did not know about such a dessert before and therefore I wanted to cook it.
Step-by-step recipe on how to make apple SAMBOO
- Applesauce 250 g
- Sugar 100 g
- Gelatin 10 g + water 60 g
- Egg white 1 pc
Pour gelatin with cold water and leave to swell.
If using sheet gelatin, soak it in ice water.
Now I'm going to make the applesauce. For this, I peel and core the apples.
Cut into small pieces, put in a ladle, put on medium heat and add a little water.
After 5 minutes, the apples are soft and I rub them through a fine sieve.
I measure out the correct amount of applesauce, add sugar and stir.
I pour in the egg white and begin to beat the mass at medium speed of the mixer. When the mass begins to increase in volume, I add the melted gelatin.
I heat gelatin in the microwave. Literally 20-30 seconds is enough. It is important not to overheat the gelatin so that it does not lose its gelling properties. If there is no microwave oven, you can use a water bath.
I continue to whisk the mass until it lightens and increases in volume. The finished mass should be dense, but fluid.
I pour the future sambuc into vases and put it in the refrigerator for 2-3 hours to stabilize. After this time, the sambuc is ready and can be served. Let's show what I did and tell you about the taste.
The dessert is obtained with a rather dense structure. It tastes very much like a whipped apple marshmallow that you forgot to dry.
