Recently stumbled across the internet for a super quick soft gingerbread cookie recipe. At first I didn't even believe that this was possible, but then I could not resist and decided to check.
The result surprised me. The cookie turned out. And it turned out not some garbage that is impossible to eat, but very tasty and unusual cookies. I will not delay, let's cook.
Step-by-step recipe for making soft gingerbread cookies
- Butter 60 g
- Sugar 50 g
- Egg 15 g
- Glucose syrup 30 g (can be replaced with honey)
- Cane sugar 40 g
- Flour 110 g
- Cinnamon 2 g
- Ground ginger 1 g
- Baking powder 2 g
- Soda 2 g
I mix butter at room temperature with sugar.
Add egg, glucose syrup and brown cane sugar and stir.
Glucose syrup can be replaced with liquid honey that is not yet sugar-coated. And instead of cane sugar, you can use regular sugar. Although unrefined cane sugar gives it a flavor and aroma that regular sugar won't.
Sift all dry ingredients to the resulting mass and mix until combined.
I collect the dough with my hands into a ball and begin to shape the cookies. I divide the dough into 16 equal parts, about 20 grams each.
I roll each portion into a ball, roll it in sugar and put it on a baking sheet covered with baking paper. Leave enough space between the cookies, as the dough will spread and increase in size during baking.
I bake for 8 minutes at 180 ° C. The biscuits may feel too soft immediately after baking, but they will become denser as they cool.
