Ingredients:

Chicken eggs - 3 pcs.

Kefir - 150 ml

Sugar - 50 g

Salt - 2 pinches

Boiling water - 150 ml

Wheat flour - 6 tablespoons

Vegetable oil - 2 tbsp.

Prepare food.

Beat chicken eggs into a deep bowl or salad bowl, add salt and sugar. Whisk until fluffy for about 2-3 minutes.

Pour in kefir of any fat content. It is best to create it yourself at home using sourdough, such a drink will be more useful. Beat the whole mixture again.

Add wheat flour and beat again, being careful not to create lumps. The dough will turn out thick, like for pancakes, it should be! Do not forget that boiling water will also be added to it. At this stage, set the container with the dough aside, letting it "rest" for 20 minutes. Boil water in a kettle.

Pour vegetable oil into the dough, then boiling water, beat immediately with a whisk.

Remember that boiling water is introduced after adding flour, but not before it, as the egg mass will curdle!

Preheat a skillet on the stove, brush with oil for the first time and pour a portion of dough onto it. Grill all pancakes for 1-2 minutes on each side. It is advisable to simmer until the edges of the pastry are browned, then turn over.

Baked pancakes, greased with butter /jam/jam, roll into rolls. Leave without filling if desired. Place on a platter or wide plate. Serve hot crêpes for dessert along with a fragrant tea or coffee, cappuccino or latte, calling your family.
