Now is the very time when there are a lot of tomatoes and they do not always have time to get into a salad or some other dish, so they often overripe. You can grind and freeze them, and you can also make a quick soup that both adults and children will be happy to eat. This soup is prepared quickly, only 15 minutes in one saucepan.

In a saucepan where the soup will be boiled and the soup itself, you need to fry the onions in vegetable oil until transparent.
Next, diced bell peppers are sent to the onion.
While the vegetables are fried, you can start preparing the tomatoes. For each tomato, we make a small cross-to-cross incision and fill it with boiling water. Then after a few minutes we dip the tomatoes in cold water. in this way, the skin is very easily removed from the tomatoes.
Cut the peeled tomatoes into cubes and send them to the pan, where by that time the onions and bell peppers have already been cooked.
I also send a spoonful of tomato paste to the pot there.
Next, be sure to add chicken broth, I always have a container with frozen broth in my freezer, it is convenient just for such cases. Boil the soup for about 5 more minutes and then grind everything with an immersion blender, then bring it to a boil again.
I use black pepper, dry garlic, and basil as seasonings. Serve with sour cream and fresh herbs.
