Surely you have met the warning “IT IS IMPORTANT TO BAKE ONLY IN A HEATED OVEN” in baking recipes. In most cases, this warning should really be followed, but sometimes the authors write it out of habit.
I decided not only to trust the theory, but to test it in practice. I devoted the first experiment to charlotte. Now is the apple season.
I will not linger on the process of making charlotte for a long time, it seems to me that everyone knows how to cook it without me. But, just in case, I am sharing the recipe.
Step-by-step recipe for how to cook charlotte with apples
Ingredients:
- Sugar 1 glass
- Eggs 4 pcs
- Flour 1 glass
- Apples 4 pcs
Peel the apples, remove the core and cut into small pieces.
Beat eggs with sugar until lightening and increasing in volume. It took ~ 5 minutes with a hand mixer.
Add flour and mix with a mixer at medium speed.
Pour the apples into the dough, mix and distribute them in baking tins.
I bake for 40-50 minutes at 180 ° C. After baking, let it cool slightly, remove from the mold, and you can serve. Now let's get back to the experiment.
What happens if you start baking charlotte in a cold oven
I decided to bake 2 charlottes at once to compare the result. I baked one in a hot oven at 200 ° C, the other I put in a cold one and also turned on 200 ° C.
Why did I set it to 200 ° C, although I wrote about 180 ° C in the recipe? It's just that in both ovens this temperature can be set as accurately as possible.
After about 15 minutes, both charlottes were already up. After 30 - they turned brown, and after 40 minutes the charlotte, which was baked in a hot oven, began to burn, but was not yet baked. So I lowered the temperature to 175 ° C in both ovens.
After 50 minutes, the charlotte in a hot oven was ready. I did not specifically check the charlotte from the cold oven, but I took it out too.
These are the charlottes I got. Before I tell you which one is which, I suggest you guess. Write in the comments which charlotte, in your opinion, was baked in a cold oven: left or right?
Well, the moment of truth. I cut both charlottes to see how they baked.
To my surprise, both charlottes rose and baked well.
I was worried that the charlotte from the cold oven would not have time to bake, but in vain. She baked beautifully and even rose a little better. It's time to take stock.
You can start baking charlotte quite calmly from a cold oven. It bakes beautifully in the same time as in a hot oven. Therefore, do not worry if you forgot to preheat the oven, the charlotte will normally bake and rise. But that doesn't mean that this method will work for other baked goods.
