Ever wondered why OREO cookies are so black? I decided to cook it at home and figure out what its secret is.
Before becoming a pastry chef, I was always interested in why OREO cookies are so black. After all, there are no dyes in its composition. I tried to make cookies like this at home, but I never got this black color.
It turned out to be pretty simple. For the preparation of Oreo, special alkalized cocoa is used. Such cocoa has a darker color and brighter taste. The higher the degree of alkalization, the darker the cocoa.
To make Oreo, you need cocoa of the highest alkalization, I did not have this, so I tried to cook it with medium alkalized cocoa. The result pleased me. Of course, the color is not that dark, but the taste is very similar. Let's cook!
Step by step recipe for how to make OREO cookies
- Flour 250 g
- Butter 225 g (room temperature)
- Sugar 200 g
- Alkalized cocoa 150 g
- Eggs 2 pcs
- Salt 1 teaspoon
- Soda ½ teaspoon
Beat the butter with sugar and salt until creamy.
I add eggs and continue to beat with a mixer until smooth.
Sift flour, cocoa and soda and mix with a mixer. Then I collect the dough into a ball with my hands.
Alkalized cocoa cakes into lumps during storage, so it is very important to sift it before use.
I wrap it in plastic wrap and put it in the refrigerator for 1 hour.
I roll out the dough between sheets of parchment into a layer ~ 2-3 mm thick. I cut out the blanks with a glass. I put the dough scraps together and repeat the procedure.
I put the cookies on a baking sheet lined with parchment and bake for 15 minutes at 160 ° C. After baking, I leave the cookies to cool on the wire rack, at this time I will prepare the filling.
Filling:
- Powdered sugar 240 g
- Butter 115 g (room temperature)
For the cream, beat the icing sugar with butter until creamy. The cream is ready. I collect cookies, and you can serve.
