An unusual European dessert, perfect for breakfast or a light snack during the day.

Recently I was lucky enough to buy a couple of kilos of delicious apricots. They were already very ripe, but we did not manage to eat them in one sitting. They would most likely deteriorate the next day. Therefore, I began to think what would be interesting to cook from them.

I wanted something new and interesting and decided to cook dumplings. Dumplings are a popular European dish. Most often it is made from potatoes and served as a side dish. But there are also sweet options that are made from cottage cheese.

The dumpling dough is similar in taste and consistency to lazy dumplings. My friends from the Czech Republic prepare dumplings in advance and freeze them, this is very convenient and saves time in the future. Let's cook!

Step-by-step recipe on how to cook apricot dumplings

  • Cottage cheese 250 g (9% and above)
  • Yolks 2 pcs
  • Butter 50 g (room temperature)
  • Flour 100 g
  • A pinch of salt
  • Apricots 8-10 pcs
  • Refined sugar 8-10 pcs

Beat the yolks and butter with a mixer until creamy. Add cottage cheese and flour and mix until smooth.

I wrap the dough in plastic wrap and put it in the refrigerator for 20 minutes. While the dough is resting, I'll prepare the apricots.

I cut the apricots and remove the seeds. I put a piece of refined sugar inside each apricot.

I divide the dough into 8 parts (I have large apricots, if you have small ones, divide by 10).

I knead each piece of dough into a layer, put an apricot in the center and wrap it.

I pour drinking water into a saucepan, add 3-4 tablespoons of sugar and a cinnamon stick. Bring to a boil, immerse the dumplings and cook for 15 minutes.

  • Breadcrumbs 100 g
  • Butter 25 g

When the dumplings are cooked, I fry the bread crumbs in butter and roll the prepared dumplings in this mixture.

Since I almost did not add sugar to the dumplings, they may not seem sweet. Therefore, before serving, I sprinkle them with powdered sugar and eat them with jam or condensed milk.
