As a pastry chef, I am always looking for inspiration. I watch videos of other pastry chefs' recipes, read books from chefs. And sometimes I can even be inspired by a short video from TikTok. Recently I came across a video that has collected over 2 million views.
After watching, I immediately had doubts that this recipe was working, and the suspicion that if a simple person prepared it according to it, he would not succeed. Let me tell you why, and at the end I'll show you what I got when I tried to make such a dessert.
This recipe was shot very beautifully and it looks like it's easy to repeat. But it's not that simple. For my recipes, I myself shoot the process and during editing I also try to create the effect that making dessert is easy. This is done to make the video easy to watch and the viewer to enjoy the process.

To achieve this, sometimes you have to reshoot scenes several times. But this video has resorted to "forbidden trick". They shot beautiful shots, repeating which, you will not succeed, but they left behind the scenes how to do it right.
If you look closely, you can see that the mass is removed from the stove in a saucepan, and poured from a glass container. This is not striking, since the video is short and the frames quickly replace each other.
I specifically tried to repeat this recipe twice, and for the first time the mass thickened on the stove and it was difficult to pour it into the milk mold. And after cooling down, she did not keep her shape.
I remembered that marshmallow gelatin loses its gelling properties when heated above 80 ° C. Well, so that the mass does not thicken, on the second attempt I decided not to boil the mixture for a long time.
Here is the result of the second try. The mixture increased greatly in volume and some of it did not even fit into the milk carton. The mass cooled down in the refrigerator looks more like a pudding, but it spreads a lot.
After two setbacks, I analyzed what could have gone wrong and figured out how to cook to make it work. But this requires a little more action and the video will no longer be so beautiful and simple.
