Popular in the USSR cake "Flight", what it looks like now and how its composition has changed

I compared the Flight from the past cake with what you can buy now. The result surprised me.

As a child, I adored 2 cakes - this is Kiev and Flight. I could eat a few pieces of cake and ask for more. Recently I was visiting and with difficulty ate a tiny piece of the current flight.

After the collapse of the USSR, many factories began to change recipes, and most of the products changed a lot. Some companies use poor quality raw materials in pursuit of profit, and this greatly affects the taste.

I decided to figure out and compare the compositions of today's cakes with recipes from Soviet times.

I base my analysis on the basis of the book “The production of pastries and cakes” by PS Markhel, Yu.L. Gopenshtein. and Smelov C.The. from 1976. All USSR cakes were produced according to the recipes from this book, which means it can be used as a source.

To begin with, I propose to see how the Soviet Flight looked like. The cake looks simple but nice to look at.

Let's compare what the cake looks like now. In the store, I found 2 cakes from different manufacturers.

As for me, the cake from the Vienna workshop (in the USSR this factory was called Bolshevik) looks more like the original, except that it is square. Palych uses colored roses and leaves as decor (the chocolate logo does not count). Let's cut it open and see what's inside.

The inside of the cake consists of two bezeless layers sandwiched with butter cream. Blotches of crushed peanuts are visible in the cakes. Let's see how the book describes the cake.

Judging by the description, the current cake matches it. I wonder if there is a difference in the compositions.

The cake from Palych does not have a chocolate cream decor, so it is not included in the composition. But otherwise, the compositions of both cakes of the current time are similar, and I did not find any discrepancies with the Soviet requirements. It's time to summarize.

It turned out that Poljot cake has hardly changed since Soviet times. The composition remains the same, the taste and texture are the same, only the decor is different. Now I think that I didn’t like this cake as a guest, simply because my taste preferences changed with age.
