I share my favorite recipe for pie dough with berry fillings.

I love American minced shortcrust pastry pies. They always have a lot of filling and very little dough. But what a test. It is crumbly and very different from the classic shortcrust pastry.

In summer, at the height of the fruit and berry season, I very often use this dough for sweet pies. Its beauty is that it is very easy to prepare and contains the most common products. I will not delay, let's cook!

Step-by-step recipe for how to make shortbread chopped dough for pies

  • Flour 300 g
  • Butter 225 g
  • Sugar 50 g
  • A pinch of salt
  • Ice water 75 g
Important. For cooking, you need butter from the freezer. I usually cut it into cubes beforehand and put it in the freezer for 30-40 minutes. Ice water is also needed, it should be cooled in advance.

I send all the ingredients, except water, into the blender bowl and start punching.

When the mass becomes like sand, without stopping the process, pour water in a thin stream and punch until smooth.

The dough should not collect in a ball, but it should not be completely crumbly. I pour the dough onto the table and put it together. Then I wrap it in plastic wrap and put it in the cold for 20-30 minutes.

When the dough has cooled, I roll it out into a layer about 7-8 mm thick.

I roll the dough between two sheets of parchment. This way the dough does not stick to the rolling pin and the surface does not need to be powdered with flour.

I transfer the dough into a mold and distribute it over the entire surface. It is very convenient to press the dough with a crumpled sheet of parchment: the dough does not stick and the hands are clean.

I put the mold with the dough in the freezer for 15 minutes. Before baking, I spread the crumpled sheet of parchment on top of the dough and pour the load inside. I have chickpeas, but you can use rice, peas - anything that will help press the dough so that it does not rise when baking.

I bake for 15 minutes at 225 ° C, then remove the weight and bake for another 15 minutes at 190 ° C until golden brown.

After baking, let the dough cool completely and remove from the mold. That's it, the cake is ready. What does it taste like?

The dough is tasty, but there is very little sugar in it. Due to this, the dough can be used to make not only sweet pies, but also hearty ones.
