I am telling you how to make 1.3 kg of pitted jelly and 3 liters of fruit drink from 1.5 kg of black currant.
The mother-in-law has ripened black currants on the site. And I just managed to deal with red currants. For the first time, we managed to collect 5 buckets of berries. To prevent the berries from spoiling, I decided to make jelly from them.
But I don't like jelly with seeds, so I'll tell you how I make jelly so that not a single bone gets into it. I also love it when I have no waste left after cooking. So from the cake I will cook fruit drink. I will not delay, let's cook!
Step-by-step recipe on how to make jelly and black currant juice
- Black currant 1.5 kg
- Sugar 1.5 kg
- Water 2.5 liters
I wash the berries under cold water and send them to the pan. I add sugar and stir with a wooden spoon so that the currants let out the juice and the sugar sticks to the berries.
I put it on a high fire. I bring the mass to a boil and lower the heat to medium, otherwise the mass will boil away.
Important. It is best to use a large saucepan as the jam will foam and expand. For the proportions indicated in the recipe, I use a five liter saucepan.
I cook over medium heat, stirring occasionally so that the jam does not escape. I check the readiness by temperature. As soon as the mass has reached a temperature of 105 ยฐ C, it's done. If there is no thermometer, you can check for drip.
Put liquid jam on a plate from the freezer. Then slide your finger over the jam, if the jam is frozen and not dripping, you're done.
When the jam is ready, I filter the liquid through a sieve, I donโt throw out the blackcurrant cake, Iโll tell you below what I do with it. Then I pour it into jars and close the lids. After complete cooling, I put it in a dark place for storage.
How to make fruit drink from blackcurrant cake
The cake, which remained after straining, I transfer to a three-liter jar. Then pour boiling water over, roll up the lid and the fruit drink is ready. The ideal proportion for this fruit drink is exactly the one indicated in the recipe. If you cook from 1 kg of currants, in my opinion, it will not be so tasty, but you can reduce the amount of water.
