Before I became a pastry chef, I had little idea that sugar can be used to make an incredible amount of different desserts. It is clear that, one way or another, sugar is found in all desserts, but some of them consist almost exclusively of it.
Now all these desserts are a matter of course for me, but it turned out that most of my friends had never even heard of them. Collected them all together and share with you.
1. Burnt sugar or burnt
The simplest thing is to take sugar and heat it in a spoon. You probably made these candies as a child. Confectioners call it dry caramel, and the people usually call it burnt.
My mother did not like it very much when my brothers and I cooked burntum, since we spoiled the spoons, and the hellish smell of burning was in the apartment.
2. Liquid caramel
If you melt the sugar with a little water, and then add warm cream and butter, you get a liquid caramel.
It is also added to Snickers, Mars and many other candies. It tastes like a little boiled condensed milk.
3. Candy Korovka
If you continue to heat the liquid caramel and add a little glucose syrup, you get a candy cow. You've probably tried it.
As a child, I loved these sweets, but now interest in them has disappeared.
4. Toffee candy
I continue to heat the caramel further. If you cook it to 150-160 ° C degrees, you get a viscous toffee, like Kis-kis or Golden Key.
This is a candy that, in my opinion, dentists came up with. She is capable of pulling out any, even the most reliable, seals once or twice.
5. Porous caramel or honeycomb caramel
If you add water to the already heated caramel, and then cool it sharply, you get porous sugar. The same as aerated chocolate. This type of dessert is not very common here, but abroad they know it well and call it honeycomb (in Russian - honeycomb).
