An easy way to make jam with a minimum of sugar in just 10 minutes.
I do not like traditional recipes when jam needs to be cooked for 3-4 days. Previously, this method was the only one that made it possible to prepare berries for long-term storage.
But now there are options to shorten the cooking time by adding pectin. Pectin is a natural thickener made from fruits. Most of the pectin is found in citrus fruits and apples. In addition, pectin can help reduce the amount of sugar in a recipe.
Today I want to share a recipe for just such a jam with the addition of pectin. I will show on the example of strawberries. I will not delay, let's cook!
Step by step recipe on how to make strawberry jelly
- Strawberries 250 g
- Sugar 125 g
- Pectin 5 g or Zhelfix 7 g
- Citric acid 1 g
I sort out the berries and rinse them under running water.
Since strawberries grow very close to the ground, which even in its name can be traced, it is very important to rinse them thoroughly before boiling. Don't skip this step.
I weigh the clean berries and send them to the cooking container. My portion is very small, so I use a scoop. Knead the strawberries a little with a spatula so that some of the berries turn into mashed potatoes, and put on medium heat.
In a separate container, I mix the pectin with a tablespoon of sugar from the total.
When the strawberry mass has warmed up a little, pour a mixture of sugar and pectin in a rain and stir constantly.
If you add sugar-free pectin, it may clump and not mix with the mass. This is fraught with the fact that the jam will not gel.
I bring the jam to a boil, add sugar and stir until smooth. I bring it to a boil again and cook for 1-3 minutes.
My portion is small, so one minute is enough. If the portion is large, cook for longer, but no more than 3-4 minutes.
After cooking, I put the still hot jelly in sterilized jars, close the lids and turn over for 4 minutes. After complete cooling, I put it in a dark place for storage. Let's show what I did.
The jelly came out incredibly fragrant, as if it were in the forest in the very clearing where it was collected. Well, I was dreaming, my strawberries were collected on the plot of my mother-in-law, but no one forbade dreaming.
