I found a 1939 Soviet "Book about tasty and healthy food" at my mother-in-law. She said that in the USSR it was almost the only book in which good recipes were collected.
I decided that I would definitely cook something according to the recipes of those times. And since Maslenitsa is coming soon, I decided to test the pancakes. I have already published recipes for ordinary pancakes on the channel several times, so I decided to cook something unusual.
In the original, this recipe is called "Precocious Pancakes", but when I read it, I realized that it is much more interesting that there are no eggs at all. I will tell you my impressions of these pancakes at the end, and now let's move on to cooking.
Step-by-step recipe on how to cook pancakes without eggs
I send flour, milk, salt and sugar to the bowl. In a separate container, I mix a quarter glass of water with citric acid and add to the dough. Stir until smooth.
I mix the rest of the water with soda and pour it into the dough, when everything is ready for baking pancakes, mix it. The dough of these pancakes is rather thick, so you can add a little milk or water.
I bake in a well-heated frying pan for 20-30 seconds on each side.
I ran into a problem while frying. The dough sets very quickly in the pan and is difficult to “spread” into a large pancake. So I first tried to spread the dough with a spatula, but then I decided to bake small pancakes.
I cooked half a serving and it came out about 15 pancakes.
The pancakes are fluffy, but slightly “heavy” in taste. I tried them with sweet fillings and liked the combination with Greek yogurt and tangerine jam the most.
I prefer thin pancakes that my wife prepares. But I am sending the recipe to my piggy bank, after all, there are not many pancakes without eggs.
