A simple recipe for minced pies that can be made even if you have no experience at all.

This summer, my mother-in-law floods me with berries from her garden. I have already managed to boil the jam and freeze it, but the berries are not over yet. As a gratitude, I decided to bake pies and treat them.

I made the pies on chopped shortbread dough. The beauty of it is that it is very easy to prepare. I chose raspberries as a filling, although other berries are perfect, you can even frozen ones.

The pies turned out to be very tasty, and the wife refused to give them to her parents. So I had to bake the second batch. The father-in-law, having tasted the pies, called them credits. This is the highest praise he gives to food.

Step-by-step recipe on how to make chopped raspberry pies

Dough

  • Flour 300 g
  • Butter 225 g (from the freezer)
  • Sugar 50 g
  • A pinch of salt
  • Ice water 75 g

I send all the ingredients, except water, to a blender and punch to a crumb state.

Then I pour in ice water in a thin stream, without stopping the blender.

When the dough begins to clump into small pieces, I transfer it to the table, put it together, wrap it in plastic wrap and put it in the refrigerator for 30-40 minutes.

Divide the chilled dough into 9-10 pieces. I roll each piece of dough into a layer about 5 mm thick.

Filling

  • Raspberry 340 g
  • Sugar 66 g
  • Starch 8 g (I have corn)

I send all the ingredients into the bowl and gently mix with a spatula. Done!

Assembling and baking

I spread a tablespoon of the filling in the center of the rolled out dough.

I wrap the dough in a pie and press the edges with a fork so that they stick together. I pierce the surface of the pie with a fork in several places.

I send the pies to the freezer for 15-20 minutes to freeze the dough.

Before baking, I grease the surface of the pies with a mixture of eggs and water (1 egg and 1 tablespoon of water, stir with a fork until smooth).

Sprinkle with cane sugar on top and bake for 30 minutes at 190 ° C. After baking, I let the pies cool completely, and you can serve. Let's show you how they look in section.
