I dispel myths about bread leaven and tell why even yeast-free bread contains yeast.
Recently in instagram I ran a free online marathon, during which, together with the participants, we prepared a real bread sourdough. And then they baked bread on it.
It turned out that some of the participants did not even know that growing a sourdough is very easy. To prepare it, you only need 2 ingredients - flour and water.
And today I want to tell you 4 facts about bread leaven, which may surprise you.
1. Sourdough is yeast
Many people think yeast is bad for the body and prefer sourdough bread. But sourdough is the same yeast, only grown in a natural way. During the growth of the starter culture, symbiotic yeast cultures and lactic acid bacteria develop in it. Therefore, it is wrong to call yeast-free bread made with sourdough. But marketers do this to make sourdough bread healthier.
2. Each person has an individual leaven
If 2 people decide to make a sourdough from the same ingredients and under the same conditions, then each sourdough taste will be different. This is due to the fact that each person has their own individual bacteria on the body, even in twins they are different. During kneading, bacteria get into the starter, due to which each starter has an individual taste. There is nothing wrong with that, but the fact remains.
3. You can cook more than just bread
Bread leaven can be used to cook not only bread. In the first fact, I already explained that leaven is yeast, which means it can be used in all recipes where it is required. Sourdough baked goods always have an incredible aroma that cannot be obtained with ordinary yeast.
4. Sourdough bread can be made without kneading
Many people think that making sourdough bread is a complex and lengthy process. You definitely need a kneader or at least a planetary mixer. But this is not the case. I recently made sourdough bread that doesn't require any special equipment at all.
