Today I cook amazing, thinnest, fragrant, tender, slightly crunchy pancakes around the edges. They are prepared without adding flour, but if you do not know in advance, then you will never guess about it.
I drive 2 large eggs into a bowl, add salt.
I add sugar and a little vanilla.
Shake with a whisk and pour in 200 grams of kefir 3.2% fat. Mix again with a whisk.
Now the most important thing: I add cornstarch instead of flour.
Such pancakes on cornstarch are allowed even for diet food.
To three tablespoons of cornstarch (with a decent top) I add 1/3 teaspoon of baking soda. I stir it.
I pour in to kefir and eggs. Mix quickly with a whisk so that there are no lumps.
Then I immediately pour in 100 ml of boiling water. The dough will turn out to be very liquid, it should be. I tear off a bowl of dough with a lid and leave for 10 minutes.
I heat the frying pan well, grease it with vegetable oil.
I pour in some dough, fry over medium heat until golden brown.
I turn it over carefully.
And these sunny, beautiful pancakes are ready!

- a pinch of vanillin
- 3 tbsp topped with cornstarch
- 0.3 tsp soda
- 100 ml boiling water
