Cake without baking and without cookies "Birch"

Today I am preparing a very interesting, unusual, delicious cake. Looks bright and cute on the table! It is easy and quick to cook, no baking!

I need three packs of cottage cheese, 180 grams each. I add 150 ml of cream of 10% fat to the curd. I took the cottage cheese and cream out of the refrigerator in advance, they should be at room temperature.

Grind the curd with an immersion blender.

I add condensed milk 150 gr to cottage cheese and cream. Add some vanilla for flavor. I stir it.

Pour 60 ml of milk into a separate bowl.

I add 10 grams of instant gelatin and mix.

3-4 minutes passed and the gelatin swelled well. I send it to the microwave for 20 seconds, there it will dissolve well.

I send the dissolved gelatin into the curd mass and beat with a mixer.

I will have a cream with additives. I pre-cut walnuts, dark chocolate (milk can be used) and raisins into small pieces. Before cutting the raisins, I poured boiling water over it for 10 minutes.

I send all the additives into a bowl and mix.

The cream is ready, it remains to make the cakes. The cakes will be unusual, vanilla croutons will act as cakes :)

We will not bake anything. Such croutons are sold differently, with raisins, with nuts. Take the ones you like best.

The finished cake will have an absolute biscuit feel. In my case, the croutons are vanilla.

Form with a diameter of 18 cm, I cover the sides with a film. To keep the film better, I smeared the sides of the mold with odorless vegetable oil.

I dip each crouton into milk for 30 seconds and put it in a mold.

I spread 1/2 part of the cottage cheese cream on crackers. I level it.

Once again I spread a layer of croutons soaked in milk and spread the remaining curd cream on top. I level it.

I cover with foil and send it to the refrigerator for at least 4 hours, I will send it overnight.

The night passed, I take off the ring and tape. Decorate with grated chocolate and finely chopped walnuts.

The cake is bright and beautiful! My husband and I decided that the cake looks like a birch tree :)

  • 60 g raisins (prunes or dried apricots)
  • 10 g gelatin + 60 ml milk
  • 200 gr vanilla croutons + 100 ml milk
