Onion preparation
If time permits, I recommend that you put the onion in the freezer for 20 minutes. This process will not have any effect on the taste of the vegetable, but you can peel and cut it without shedding a single tear. By the way, frozen onions are very easy to peel with large plates.
Another way is just the opposite. It is appropriate when you have very little time.
Put water on fire, bring to a boil. Submerge the whole onion in boiling water for exactly one minute. Be careful with time, if you leave it for 2-3 minutes, then it will have time to cook. After a minute, the onions are ready for easy peeling and slicing.
I prefer the first method, sometimes I even put the knife in the freezer.
Preparing a cutting board
Please note that the board must be clean and dry. If you've recently cut potatoes with it, be sure to rinse and wipe dry. Low temperature is an excellent ally in the fight against tears. You can also put the dry board in the freezer for 1 minute or take it out on the balcony during the cold season.
Surely, almost every home always has a lemon for tea. Cut a small slice in the front or back of the lemon and rub it onto a dry cutting board. The fact is that citric acid will absorb the very substances that cause a stream of tears when chopping onions.
Do not worry, this will only have a positive effect on the taste of the onion. Excessively bitter onions will leave some of their bitterness on the board, light-juiced onions will pick up moisture from the lemon. So, whatever one may say, there is only one benefit!
Coarse salt, which you need to sprinkle on a cutting board, also helps a lot. But there may be inconveniences when cutting, and if you are preparing a sweet salad with the addition of onions, then it is better not to use salt. But for baking vegetables, this method is well suited.
Only once have I tried the vinegar method. They need to wet a cutting board before peeling and slicing onions. However, if you overdo it with a dose of vinegar, then it is not the onion that will cause tears, but the vinegar itself. Also, it is not always easy to remove the vinegar smell from a cutting board, especially a wooden one.
When preparing the board, I prefer the method with lemon, the onion turns out to be tasty, aromatic, juicy, and I don't even remember about tears.
Environment
The work surface is usually located next to the stove. While you are chopping the onion, I advise you to have clean water boiling on the stove. Boiled soup won't do. The steam will absorb the tears without irritating your eyes.
If you like parsley, then put a couple of twigs next to the board, having previously wrinkled them with your hands, so that the greens give more flavor. By the way, for a more effective effect, you can chew parsley. While you chew, you are distracted, and the smell and taste neutralize the tear duct.
