Sometimes you want to cook something tasty, satisfying and at the same time simple and easy to prepare dish. Chicken and Egg Salad fits this description wonderfully. It can be eaten for lunch or dinner. For those who go in for sports - after training.

When choosing chicken for your recipe, go for homemade meat. It can be purchased on the market. If you buy from a store, then carefully look at the expiration date and color.

Take eggs fresh, but which lay for several days. Then it will be easier to clean them from the shell.

Ingredients:

Chicken fillet - 250 gr.

Eggs - 3 pcs.

Bulgarian pepper - 150 gr.

Cherry tomatoes - 100 gr.

Soy sauce - 50 ml

Cucumber - 150 gr.

Salad, herbs - a bunch

Mustard - 2 tsp l.

Olive oil - 30 ml

Salt, black pepper, spices - to taste

Preparation:

1. Prepare all the required ingredients according to the list.

2. Peel the chicken fillet from veins, films, excess fat and cut into small pieces. Transfer the meat to a deep bowl, pour in the soy sauce and add mustard, dried herbs, black pepper and spices to taste. There is no need to add salt to the marinade, as there is enough salt in the soy sauce.

3. Mix everything well with your hands, try to evenly distribute the marinade throughout the meat. Leave the fillets to marinate for 20-30 minutes.

4. In the meantime, let's get to the rest of the ingredients. Wash the cucumbers and cut them into long strips using a peeling knife.

5. Peel the bell peppers and cut into cubes. I advise you to take red or yellow, as then the dish will improve not only the taste, but also the appearance.

6. Wash the cherry tomatoes, cut into quarters and sprinkle with dried parsley or basil.

7. Boil chicken eggs hard-boiled in salted water, peel, cut into quarters and sprinkle with pepper to taste. You can also cook soft-boiled or poached. You can replace chicken eggs with quail eggs.

8. Place the meat in a preheated skillet with olive oil (or vegetable oil, mustard oil, sesame oil). Fry fillets on both sides for 3-4 minutes over low heat without the lid closed.

9. Next, let's make the gas station. To do this, pour olive oil into a deep bowl, add mustard, dried herbs, salt and black pepper to taste. You can also add chopped garlic and lemon juice. You can also dress this salad with balsamic vinegar with spices or a dressing of mashed avocado with garlic, Greek yogurt and dried basil.

10. Stir well until smooth. Then place the chopped salad and herbs on the bottom of the plate, and on top of the rest of the ingredients in the order you like best. You can serve the prepared chicken salad.
