Semolina is often substituted for flour. The calorie content decreases slightly (328 Kcal semolina versus 342 Kcal wheat flour in 100 grams), but the taste and structure of the dish are different.

I suggest that you sometimes cook well-known lazy cottage cheese dumplings with semolina. The rather capricious dough remains viscous and sticky, you have to tinker. But semolina does not interrupt the curd aroma, as it happens with the flour version, and remains in the background in warm dumplings.

Ingredients:

Cottage cheese - 200 g

Semolina - 50 g

Egg - 1 pc.

Sugar - 30 g

Butter - 30 g

Salt - a pinch

Step by step recipe:

Step 1 - To make cottage cheese lazy dumplings with semolina, take the foods on the list. The amount of cereal may vary, so keep some margin. Much depends on the moisture content of the curd and the size of the egg.

Step 2 - Prepared from cottage cheese with a different percentage of fat content, but remember that from fat-free, dumplings are dry. Choose fine, salt-free, 5-9% fat. If you got it with hard lumps, push through a sieve or additionally grind with a submersible blender. We drive in an egg, stir.

Step 3 - Pour granulated sugar, semolina (30 g) into the moistened mass and stir again in a circle. If desired, flavored with vanilla sugar, salt. Leave it alone for 5-10 minutes for the grains to swell.

Step 4 - We transfer the curd dough for lazy dumplings to a board sprinkled with semolina, pull out the bar - roll the blank and pick up the missing cereal. We cut a long "sausage" across.

Step 5 - We lightly ram each short block with our fingers and also sprinkle with semolina from all sides. In this form, lazy semi-finished dumplings are frozen (in one layer), after hardening, they are poured into a container or bag and stored in the freezer until the desired moment. Boil in the usual way: in boiling water with a pinch of salt.

Step 6 - Put boiling water in salted steep (!) Boiling water, 30-60 seconds after surfacing, gently pry and take out with a slotted spoon - put in a clean plate and immediately pour with melted butter or throw it on top in pieces. On hot dumplings, it melts instantly.

Step 7 - Serve the lazy cottage cheese dumplings with semolina immediately - with sour cream, jam or honey. Bon Appetit!
