Not only delicious, easy to prepare, but also visually attractive appetizer will beautify the family private lunch, buffet table, a friendly picnic-style party and will be adequately accommodated with pickles on a festive table.

Vegetables - eggplants and tomatoes - choose fleshy, strong, not overripe. Much depends on the cheese. The more expressive it is, the better the dish itself. I recommend mature, mellow varieties, with "character" and a long aftertaste.

Ingredients:

Eggplant - 2 pcs.

Tomatoes - 2 pcs.

Garlic - 2 teeth

Hard cheese - 150 g

Salt, black pepper - to taste

Vegetable oil - 20 ml

Fresh herbs - for serving

Step by step recipe:

Step 1 - Planning at home to cook eggplant baked in the oven with tomatoes, except using a baking sheet and a baking sheet or a large, fireproof shape / pallet.

Step 2 - The little blue ones, after washing and drying, we divide in different ways. We chop part of it with circles, the rest - with longitudinal plates. In both versions, we aim to set the same thickness: approximately 4 mm. It must be said that baked eggplants become very flexible. It is easy to form a stuffed snack of them, roll up rolls, build multilayer canapes. Sprinkle the slices with salt, ground pepper and rub a little to coat the pulp with spices on each side. Immediately cut the cheese into three thin shavings and cut the tomatoes into slices.

Step 3 - Cover the baking sheet with parchment and be sure to grease it with vegetable oil (otherwise the vegetables will stick / burn - don't risk it). Any refined, with a neutral aroma is suitable. We lay out the mugs and strips in one layer, freely. We push through the garlic cloves through a press and spread more or less evenly over the vegetable blanks.

Step 4 - Next, place the tomato slices - here you can put a little overlap. Season again if necessary.

Step 5 - We distribute the cheese shavings last - add the eggplants with tomatoes and garlic. Many cooks cover with slices of cheese. We bake in a pre-heated oven for about 20 minutes at a temperature of 200 degrees.

Step 6 - Pry on with a spatula and transfer the delicious-smelling eggplants baked in the oven with tomatoes and garlic under a cheese crust onto a clean plate, decorate with herbs and serve.
