Chicken cutlets for children's and dietary rations without breading in bread crumbs or flour, bread and toasting. Bake them in the oven as shown in the recipe, or send them to the steam room.
Vegetables or root vegetables are added to the minced meat to add nutritional value, taste and juiciness. For example, carrots, zucchini / zucchini / squash, different varieties of cabbage, bell peppers, celery, parsnips.

Step by step recipe:
Step 1 - For dietary and relatively low-calorie chicken cutlets at home, use the foods listed. Optionally, carrots can be eliminated or replaced with pumpkin, courgette, or your other favorite firm-textured vegetables.
Step 2 - It is convenient to immediately use good quality commercial minced meat. Fillets (without fat and skin) are also passed through a meat grinder on their own. If you want to get the meaty fibers as tender as possible, scroll twice. Drive an egg into the minced chicken.
Step 3 - In a meat grinder or chopper with a "metal knife" attachment, crush peeled onions and carrots, as well as a couple of branches of fragrant dill or other fresh herbs, to a fine pulp.
Step 4 - Combine vegetables with meat, salt, and pepper if necessary. Mix thoroughly to distribute all ingredients evenly.
Step 5 - We transfer the mass to a strong food bag, pulling the edges, hit it several times on a hard surface (tabletop, board). In this way, the plasticity of the minced meat is increased, which simplifies the molding of blanks and further prevents cutlets, meatballs, kebabs from falling apart.
Step 6 - Cover the form with foil or parchment, grease with vegetable oil. With wet or oiled hands, we mold oblong cutlets, semi-finished products, put in a container. We bake in a preheated oven for 30 minutes at a temperature of 170 degrees, turn over once. Usually juice flows out and additionally steamed cutlets. If the resulting moisture is not enough, add boiling water.
Step 7 - Serve delicious dietary minced chicken cutlets warm or reheated, alone or with a side dish, vegetables and herbs.
