Minced chicken pancakes are a simple recipe for a quick and tasty meat dish for the whole family. This is a great idea for working mothers and wives who don't want to stand at the stove for a long time after a hard day at work.
Ingredients:
Minced chicken - 500 g
Chicken egg - 1 pc.
Flour - 1-2 tablespoons
Mayonnaise (optional) - 1 tablespoon
Salt to taste
Ch.m. pepper - taste
Baking powder - 1.5 tsp
Green onions - 2 pcs.
Vegetable oil - 2 tablespoons
Preparation:
1. Prepare foods on the list. Wash green onions under running water, pat dry with paper towels.
2. Buy minced chicken of good quality, preferably from fillet - it is without excess fat. Add 1-2 tablespoons of wheat flour to it (by the way, you can add cornstarch, with it the pancakes taste softer). Add baking powder, beat in a large chicken egg, salt and pepper to taste.
3. Stir the minced chicken thoroughly to separate the flour and baking powder. At this stage, I always add a tablespoon of delicious and high-quality mayonnaise, with pancakes turn out juicy, but if you don't like it, you can skip this step, then they will be less high-calorie.
4. When the minced meat is completely homogeneous, finely chop the green onion, add it to the bowl and knead well for the last time.
5. Leave it for a few minutes, the baking powder will begin to work - the minced meat will become fluffy and airy.
6. We put the pan on the stove, heat a small amount of vegetable oil in it, put it in full a tablespoon with a slide of minced chicken and fry the pancakes over low heat on both sides until a beautiful golden brown crust and readiness. 3-4 minutes on each side will be enough.
7. Be sure to put the finished minced chicken pancakes on paper towels to remove excess oil.
8. Serve for family dinner with your favorite sauce.
Any garnish for such chicken pancakes is suitable - mashed potatoes, pasta, rice, buckwheat, wheat porridge - whatever you like more.
