To all those who count calories, choose a healthy diet, I offer simple and tasty dishes a recipe for beet salad with apple without mayonnaise. A boiled, sweetish root vegetable is mixed with a juicy and slightly sour fruit - usually rubbed with shavings, but can be cut into bars or cubes.

Beetroot salad with apple will satisfy your hunger on fasting days, useful as a light snack during an eventful day or a treat at a bachelorette party.

Optionally supplemented with raisins, various dried fruits, nuts. But remember, then the dish will significantly add in calories.

Ingredients:

Boiled beets - 2 pcs.

Apples - 2 pcs.

Lemon juice - 1 tbsp l.

Maple syrup - 1 tbsp l.

Olive oil - 2 tablespoons l.

Greens - 30 g

Salt, black pepper - to taste

Step by step recipe:

Step 1 - Take the groceries on the list. Boil the beets ahead of time in boiling water or bake them in foil, parchment or a refractory form under a lid. Puncture with a skewer, make sure the roots are soft. Please note that the larger the beets, the longer it takes to cook and bake, large ones can be cut. Cool and peel off the top shell. Choose apples according to the season, better - sweet and sour and juicy green varieties. Dessert and overly sweet, overripe will lose their density, will not balance the sweetness of the beetroot, and the salad will not seem so fresh.

Step 2 - Remove the peel from the apples, especially the tough ones. Rub with coarse shavings and pour generously with lemon juice. I must say that beet juice will color the apple pulp anyway. Therefore, lemon not only protects apples from oxidation, but rather enhances freshness, serves as a dressing (replaces vinegar).

Step 3 - Grind the cooled and peeled boiled beets with the same "caliber". Stick to approximate proportions - vegetables and fruits are equally divided.

Step 4 - Chop up a small bunch of fresh herbs. Young and fragrant are good: dill, parsley, basil, cilantro and all the vegetation that you love.

Step 5 - Pour in the olive oil, maple syrup, salt and lightly pepper - stir all layers of the dish from bottom to top to thoroughly saturate the fruit and vegetable chips. Be sure to remove the sample before serving. Add this or that component if necessary.

Step 6 - Transfer the apple and beetroot salad to a clean bowl and serve immediately.
