Homemade meringue roll recipe
- First, you need to make nut flour from hazelnuts, adding 1 tablespoon of sugar to it from the total amount.
- With sugar, nuts are better ground.
- Add cornstarch and powdered sugar to the finished flour.
- Mix everything together so that there are no lumps.
- Prepare a sheet of parchment.
- Preheat the oven to 170 ° C degrees.
- Beat the egg whites until lather.
- Gently add sugar on a spoon.
- When the mass has become lush and stable, you can add 1 tsp. lemon juice and flavoring. (I add vanilla.)
- Beat further until firm and firm.
- Add the nuts to the finished meringue and mix everything gently.
- Place the dough on parchment.
- Transfer the parchment to a baking sheet and place in the oven for 20 minutes.
- Allow the finished roll to cool slightly, gently turn it over and remove the parchment.
- Whipped cream is used as a cream for this roll.
- I decided to make the mascarpone cream in half.
- Cream and cheese should be well chilled.
- First, mix everything then beat.
- If you want a thicker cream, use more mascarpone and less cream.
- Apply the cream to a completely cooled roll.
- I am making a roll with canned tangerines without excess liquid.
- Roll up the roll with paper. If it cracks a little, don't be discouraged.
- All meringue rolls are very fragile.
- Put the rolled roll in the refrigerator for 1-2 hours.
- Decorate the cooled roll at your discretion. You can use chocolate for decoration.
