Burger with chickpea cutlet is one of the vegan, vegetarian, lean options for fast food, but, as practice shows, meat eaters do not remain indifferent to it. It can be taken for a snack, on the road or for a picnic, served for breakfast or dinner. Unlike street fast food, there is no harm in it. But it must be remembered that everything needs a measure.
Ingredients:
For the bun:
Water - 250 ml
Dry yeast - 1.5 tsp l.
Sugar - 1 tbsp. l.
Salt - 0.5 tsp l.
Wheat flour - 480 g
Olive oil - 2.5 tbsp. l.
Sesame seeds - 1 tsp l.
For the cutlet:
Dry chickpeas - 200 g
Onions - 70 g
Carrots - 50 g
Garlic - 3 cloves
Cumin (cumin) - 0.25 tsp
Ground coriander - 0.5 tsp l.
Ground cayenne pepper - 0.33 tsp
Wheat flour - 4 tbsp. l.
Salt to taste
For the sauce:
Turmeric - 1 tsp l.
Sweet red paprika - 1 tbsp l.
Canned tomatoes - 400 ml
Wheat flour - 3 tbsp. l.
Additionally:
Pickled cucumber - 2 pcs.
Fresh cucumber - 2 pcs.
Tomato - 2 pcs.
Lettuce - 8 leaves
Preparation:
Step 1: Measure out the ingredients needed to make the buns. They can be used ready-made, and even rich, if there are no restrictions in the food culture. But it is better to cook at home to be sure of the composition.
Step 2: Dissolve salt, granulated sugar in water at room temperature, dissolve dry yeast. Add pre-sifted wheat flour in portions, knead a little tough dough.
Step 3: Add 1 tbsp first. l. olive oil and knead the dough thoroughly. Then add another 1 tbsp. and knead again. The dough will become softer.
Step 4: Cover the container with the dough with a foil and leave to increase the volume by 1.5-2 times in a warm, draft-free place for 1.5-2 hours.
Step 5: Slightly knead the matched dough. Divide into 8 equal parts. Form slightly flattened blanks. Place them on a baking sheet.
Step 6: Cover with cling film, which can be lightly greased with olive oil, to prevent the dough from sticking during proofing. Leave in a warm place for 20-30 minutes to rise. If desired, you can sprinkle sesame seeds on the buns before baking.
Step 7: Bake the spaced pieces in a preheated oven (190 degrees) for about 20-30 minutes until a beautiful ruddy shade. Grease the finished buns with olive oil, but not greasy. Cover with a towel and let them "rest".
Step 8: Now you can start cooking cutlets. Garlic leaves or arrows can be used instead of cloves.
Step 9: The cooking time shown does not include the time for soaking the chickpeas. Usually it is kept in cold water for 24 hours, periodically changing it. But you can shorten the time by pouring boiling water over the peas. Leave it overnight and use it in the morning. Just before and after soaking, rinse the legumes with cold water.
Step 10: Grind the chickpeas along with the onions and carrots in a food processor or blender. You can pass it through a meat grinder. First, roll the chickpeas, and then again, but this time with the vegetables. Mix.
Step 11: Add chopped garlic, cumin (cumin), ground cayenne pepper and coriander, sifted wheat flour. Salt at your discretion, but you must take into account the presence of salt in canned tomatoes and cucumbers. Mix thoroughly and leave for 15 minutes.
Step 12: Form cutlets from minced chickpeas. Place them on a baking sheet thinly greased with olive oil. But, if you wish, you can cook them in a pan with a little oil.
Step 13: Bake the patties in an oven preheated to 180 degrees until cooked through (about 20-30 minutes). Remove the finished cutlets from the baking sheet onto a dish.
Step 14: The sauce will take 5-6 minutes to prepare if you cook it in the microwave.
Step 15: Remove the skin from canned tomatoes, and knead the pulp. If desired, rub through a sieve to remove seeds. The resulting puree should be 400 ml.
Step 16: In a microwave safe bowl, mix the tomatoes with the pre-sifted flour, paprika and turmeric.
Step 17: Cook the sauce on maximum power (my microwave has 800 W) until the consistency of thick sour cream. It is important to mix thoroughly every minute during the cooking process, so it is more advisable to turn on the microwave for 1 minute each time and add the required number of cycles.
Step 18: When all the components of the burger are ready, you can proceed to assembly.
Step 19: Cut the buns lengthwise into 2 pieces. If desired, the halves can be fried on the grill or in a pan with a minimum amount of oil. Smear both slices obtained with sauce.
Step 20: Put a leaf of lettuce on top of the sauce, if necessary, make a fold to the size of the bun, but you don't need to cut off the "excess". Next, lay out the cutlet.
Step 21: Put canned cucumber cut into slices on it.
Step 22 Or a fresh cucumber. Both options are popular in my environment. Or a mix of two types is also possible.
Step 23: Put chopped tomato on cucumber slices. It is better to choose it larger, so that it is solid plastic. In the case of a small fruit, you will have to make one and a half plastic. Finish the assembly with a slice of bun.
Step 24 Chickpea cutlet burgers are ready. Serve with soft drinks, coffee or tea.
