Pork Stew with Vegetables is a delicious, hearty and fairly simple dish for a family lunch or dinner. My family loves this, so I have to cook it often, especially in season.
As a side dish, you can cook and serve buckwheat, rice, any pasta, boiled potatoes, as well as baked or mashed potatoes - in general, what you like. And do not forget about homemade marinades - pickles or cabbage with tomatoes will be very useful.
Ingredients:
Pork loin - 200 g
Onions - 50 g
Carrots - 70 g
Champignons - 150 g
Eggplant - 150 g
Zucchini - 100 g
Parsley - 5 g
Salt to taste
Ch.m. pepper - taste
Vegetable oil - 2 tablespoons
Bulgarian pepper - 40 g
Preparation:
1. Prepare foods on the list. Peel the onions, bell peppers and carrots. Wash vegetables and meat under running water, dry with a paper towel.
2. Cut the pork into large pieces, heat a small amount of refined odorless vegetable oil in a pan, put the meat in it. Fry on all sides over high heat until golden brown, about 5-7 minutes. Add onion chopped into large cubes, turn the heat down and cook for 3-4 minutes, until the onion slices are soft.
3. Chop the carrots, transfer them to the pan with the meat and onions, cook for 3-4 minutes over low heat.
4. Cut the zucchini and bell peppers into the same small pieces, add to the pan and continue cooking for about five minutes.
5. The last to add are the mushrooms cut into quarters and the eggplant chopped into small cubes. Stir, these vegetables will immediately absorb all the oil from the pan, so pour in a small amount of water or vegetable broth and simmer over low heat until the meat is fully cooked - 10-12 minutes.
6. Season the finished dish with salt and pepper, if desired, you can pour in a little wine vinegar for acid. Add fresh chopped herbs, stir, turn off the stove.
Pork with vegetables in a pan is ready. By the way, meat can also be served as an independent hot dish, and in the pan in which it was cooked. Enjoy!
