Zucchini of various varieties, including squash, are fried in a similar way. But of the bright yellow or contrasting striped zucchini, the appetizer looks the most attractive. If you have a choice, I recommend them. The younger the vegetables, the better: more tender, with a thin shell and no tough seeds.

Ingredients:

Zucchini (zucchini) - 1 pc.

Flour - 50 g

Vegetable oil - 50 ml

Zira - 5 g

Salt, black pepper - to taste

Step by step recipe:

Step 1 - To make flour-fried zucchini, take the foods on the list. You can experiment with spices, but it comes out delicious with base salt / pepper. This recipe contains a pinch of cumin / cumin with a spicy-tart aroma characteristic of Middle Eastern cuisine. Eliminate or replace with other expressive notes as desired. Most often, sprinkle the dish with chopped garlic - delicate zucchini get a pungency and an appetizing smell. Any lean oil is suitable for frying, it must be refined so that it does not smoke. In addition to sunflower, corn, olive, feel free to use, for example, sesame - this will saturate the appetizer with a pleasant nutty flavor. Delicate zucchini gratefully accept any new flavors.

Step 2 - Wash zucchini or regular zucchini in cold water, wipe with a towel, cut off the extreme parts. Cut the vegetable across into slices about 3-4 mm thick.

Step 3 - Sprinkle each circle with salt and ground hot pepper. If you like more seasoning, rub on both sides.

Step 4 - After that, we bread the round blanks one by one in wheat flour - sprinkle them thickly, covering them with a thin flour shell from all sides, crush the excess.

Step 5 - In a well-heated pan with the addition of vegetable oil, fry the zucchini in flour until a light golden crust. First, blush from below, then turn over and let dry and soak in oil from the back. Maintain a high temperature and fry in batches, spreading out spaciously, in one layer.

Step 6 - From the pan, immediately transfer to paper that absorbs the fat. Sprinkle the still hot zucchini with fragrant cumin.

Step 7 - Serve delicious fried zucchini in flour with cumin, warm or chilled with some sauce, fresh herbs, as a vegetable snack or addition to a side dish.
