Buckwheat soup with meatballs

A low-calorie, non-heavy, yet satisfying, tasty and easy-to-prepare buckwheat soup for the whole family. Meatballs can be made from a variety of meats, including chicken. If you want to get a dietary option, just boil the vegetables, and for a larger broth, fry the onions with carrots in vegetable oil.

Ingredients:

Minced chicken - 300 g

Potatoes - 4 pcs.

Onions - 1 pc.

Carrots - 1 pc.

Celery root - 20 g

Buckwheat - 2 tbsp. l.

Garlic - 3 teeth.

Water - 1.7 l

Greens - 50 g

Bay leaf - 1 pc.

Salt, hot pepper - to taste

Step by step recipe:

Step 1 - To make buckwheat soup with meatballs at home, take the foods listed. Buckwheat is a rather aromatic cereal, expressive in taste, so you can get by with a standard set of salt, hot pepper and bay leaf. In my example, there is also a spicy celery root and garlic, which are often included in various broths, but feel free to remove them if necessary. In any case, meatballs will add the broth and an appetizing smell.

Step 2 - Boil about 1.5-1.7 liters of water over an overhead fire. At the same time we wash, clean and chop vegetables. Cut the potato tubers into bars, the onion into small cubes, the carrots with three coarse shavings, chop one garlic clove. The root celery slice can be left intact, caught at the end of the boil, and discarded. Dip the vegetable platter in boiling water along with the bay leaf. Boil again and, reducing the temperature, cook without salt (this way vegetables soften faster) under a lid for about 10-15 minutes.

Step 3 - Immediately, immediately after the vegetables, throw in a portion of the washed buckwheat.

Step 4 - We make small balls of the same size from chicken or other minced meat. But first, mix the minced meat with finely chopped fresh herbs and a garlic clove passed through a press, season with salt and ground black pepper. Roll the meatballs with wet or oiled hands.

Step 5 - When the vegetables with buckwheat in the pan are almost cooked, salt the vegetable broth and add the chicken meatballs with garlic and dill. We turn with a spoon to prevent the meat balls from sticking to the bottom or walls of the container. Let it boil again and keep on fire for the next 7-10 minutes. Remove from heat, pepper, if desired, enhance the spiciness with another chopped garlic clove, supplement with fresh herbs.

Step 6 - Pour buckwheat soup with chicken meatballs into bowls hot or warm, serve alone or with sour cream.
