This recipe for cooking meat with pasta and vegetables is a real lifesaver, because such a dish can be served to a family both for lunch and dinner, and it is also very simple to prepare. It turns out delicious and very satisfying, since all the ingredients are well balanced and match in taste. By the way, you can add mushrooms, zucchini, tomatoes or any other vegetables that your homemade ones like to the dish. On occasion, be sure to try making pasta with pork, the family will love it.

Ingredients:

Fusilli pasta - 200 g

Pork - 300 g

Bulb onions - 1 pc.

Eggplant - 1 pc.

Carrots - 40 g

Bulgarian pepper - 1 pc.

Garlic - 1 clove

Salt to taste

Pepper to taste

Parsley - 5 branches

Vegetable oil - 2 tablespoons

Tomato sauce (optional) - 2-3 tbsp

Preparation:

1. Prepare all the necessary foods from the list. For this recipe, I use fusilli pasta because of its shape, sauce and chopped vegetables hold well on it. Peel the onions and carrots, wash all vegetables and parsley under running water, dry. Take pork meat with a thin layer of bacon, with it the finished dish will be tastier. Wash the meat too, dry well with paper towels.

2. Heat a little vegetable oil in a frying pan, put pork chopped into a block or cubes, fry until golden brown on all sides.

3. Cut the onion into half rings, chop the carrots as you like. Add to the pan, reduce heat, cover and fry the pork with vegetables for 3-4 minutes.

4. Bell pepper, preferably a bright color, peel of seeds and stalks, cut into thin slices, add to the pan and cook for another 3-4 minutes.

5. Simultaneously boil water, add a little salt, add pasta and cook according to the instructions on the package.

6. Cut off the top and tail of the eggplant, cut it into small cubes, put in the pan, stir and cook for 3-4 minutes.

7. Now pour a glass of water into the pan, in which the pasta was cooked, salt and pepper. If you wish, you can add your favorite tomato sauce - it will add sweetness, sourness and color to the gravy. Crush a clove of garlic with the back of a knife, put it in the pan and cook the dish for another 5-7 minutes.

8. By this time, the pasta should have already been cooked. Drain the water from it, add the fusilli to the pan, sprinkle with fresh chopped herbs, stir.

Catch and discard the garlic before serving. Divide the cooked pasta with pork and juicy vegetables into portions and serve immediately. Very tasty and satisfying, I recommend it.
