Tabouleh is a famous salad of Arabian cuisine. In the classic version, the main ingredient is bulgur, but with couscous it turns out no less tasty.
The dish is prepared quite simply and comes out very satisfying, but at the same time light, because it contains a large amount of greens and vegetables. Very aromatic, thanks to herbs and garlic, with a slight sourness from lemon juice, with cucumber freshness - this is a salad, an appetizer, and a side dish.
Ingredients:
Bulgur - 200 g
Parsley (fresh) - 1 bunch
Mint (fresh) - 3 sprigs
Lemon - 1 pc.
Cucumbers (medium) - 6 pcs.
Cherry tomatoes - 12 pcs.
Garlic - 1 clove
Salt to taste
Coriander (ground) - ½ tsp
Black pepper (ground) - to taste
Olive oil - 4 tablespoons
Step by step recipe
1. Let's prepare the ingredients. Instead of cherry tomatoes, you can use two regular medium-sized tomatoes. But with cherry, especially multi-colored, the salad will sparkle with bright colors!
To cook bulgur, bring the required amount of water to a boil and cook the cereals according to the instructions on the package, then fold them onto a sieve and let cool slightly.
2. While the cereal is boiling and cooling, prepare a fragrant base for it: finely chop the parsley and mint leaves, as well as the garlic. If the clove is small, add another. Transfer everything to a suitable deep bowl, add coriander and black pepper.
3. Pour the slightly cooled, but still warm bulgur into a bowl with aromatic herbs and garlic, squeeze out lemon juice. Mix everything, cover the bowl and let the bulgur soak in the aromas and flavors.
4. In the meantime, prepare the vegetables: cut the cucumbers into half moons.
5. Cut the cherry tomatoes in half or quarters, depending on their size.
6. Transfer the chopped vegetables to the bulgur, season with olive oil, salt to taste, mix everything. Arabic salad is ready to serve.
7. In the homeland of Tabule, it is customary to serve the dish on lettuce leaves. But you can put it on a beautiful plate or serve it in portioned dishes, additionally sprinkle it with fresh herbs.
