White cabbage stewed with carrots and onions is an excellent vegetable filling for pies, pies and dumplings. It is good as a cold appetizer, as a side dish for meat and poultry, is the basis for bigus with prunes and ribs, and also helps out on fast days.
Ingredients:
White cabbage - 500 g
Carrots - 1 pc.
Onions - 1 pc.
Vegetable oil - 40 ml
Tomato sauce - 50 ml
Salt, black pepper - to taste
Step by step recipe:
Step 1 - To make stewed cabbage with carrots and onions at home, take the foods listed. This dish is often flavored with thyme, cumin, coriander, bay leaves, fennel seeds, and other richly spicy additives. They are stewed both in vegetable oil and with the addition of animal fats (lard, lard). They often do without tomato paste or tomato sauce - the most delicate option is obtained.
Step 2 - In a spacious frying pan with a high side or in a saucepan, cauldron, heat refined sunflower or corn oil. We spread the onion chopped into small cubes, sprinkle with a pinch of salt for quick caramelization and at moderate temperature, sometimes stirring with a spatula, sauté for three minutes until transparent. We do not allow to darken, dry out or burn.
Step 3 - Add carrots grated with coarse shavings to the fried onions. The juicier the root vegetable, the better. We do not regret carrots, it colors a pale appetizer and gives a sweetish pleasant aftertaste. Mix again and continue to brown for the next three minutes.
Step 4 - Put cabbage to the softened carrot-onion mixture - before that, chop it into strips. Stir from bottom to top, saturate the cabbage slices with oil for another 2-3 minutes.
Step 5 - Pour in tomato sauce or pasta diluted in water. Salt, stirring, reduce heat and simmer under the lid for about 30 minutes. If moisture is insufficient, add some water. Since in my recipe the sauce itself has a rich taste, I don't add any seasonings. Add spicy grains, laurel, or allspice as needed.
Step 6 - Try stewed cabbage with carrots and onions for softness, salt. Pepper. Cool or serve hot.
Step 7 - The lean dish is ready. Serve to the table on your own or as a side dish, snacks.
