This time I want to share with you one of the ways to bake a whole chicken in the oven, which my friend shared with me.

Maybe someone already knows this method of baking, but for some, perhaps the recipe will turn out to be new and I hope it will be an interesting discovery.

One of my favorite ways to bake a whole chicken in the oven is to "plant" it on a jar, in this version the meat is very juicy, and the chicken is covered with a beautiful ruddy crust on top. But, there are nuances for such cooking - you need an oven of large enough volumes to cook a large chicken, or you have to cook a small chicken.

And only last week, I learned from my friend the recipe for baking a whole chicken carcass in the oven, which does not need to be put on a jar...

No need to wrap in foil or put in a baking sleeve. All it takes is just a Soak chicken ...

📕Ingredients for making chicken: 🥙

Whole chicken carcass - 1 pc.
Butter - 50 g
Boiled water, chilled - 1.5-2 l
Salt - 3 tbsp. l. for 1 liter of water
Ground paprika - 1-1.5 tsp l.
Spices for chicken (black pepper, turmeric, coriander, etc.) - to taste
Apples - 2-3 pcs. (optional)

👨🏻‍🍳 Let's start cooking... ⤵️⤵️⤵️

The recipe is actually very simple! The first step is to prepare a "soak" brine for the chicken. To do this, take 1.5-2 liters of boiled water, cool it to room temperature, put salt at the rate of 3 tbsp. l. for 1 liter of water. That is, for 1.5 liters, you need 4.5 spoons. Stir the salt until it is completely dissolved. Then we take the chicken, prepare it - wash it, if there are any feathers on the skin, remove them. We transfer the prepared chicken to a large saucepan or other deep container of a suitable size - the carcass should fit completely in this dish. And pour in the prepared salt water. Cover the top with a flat plate, put oppression and send it to the refrigerator for at least 8 hours, or for a longer time.

Then we take out the "soaked" chicken from the brine, wipe it dry with paper towels. Inside the carcass, if desired, you can put apples cut into slices, sprigs of fresh thyme or rosemary, dried fruits or even rice. And you can bake without anything - that's how you see fit. And we put the chicken in any suitable baking dish.

Now we are preparing a fragrant butter spread. Mix the softened butter with paprika and other seasonings of your choice. Spices can be any, but it is very desirable to include paprika in the mixture, because it will give a beautiful color. But I would not recommend using fresh garlic, because it will burn quickly and result in an unpleasant bitterness. If you want to add a garlic touch, it is better to put it dry. Stir everything thoroughly.

We distribute the prepared "spread" over the entire surface of the chicken ...

... and put it in an oven preheated to 180 degrees for 1.5-2 hours. During the baking process, periodically open the oven and pour fat on the chicken, which will accumulate at the bottom of the mold. If the skin starts to burn near the end of cooking, cover it with foil.
