New Year (Christmas) Czech carp

Baking carp for Christmas was invented a long time ago and it is very popular in Europe. We celebrate the New Year on a larger scale, so this dish can be safely attributed to the New Year.

A bit of history.

Since the 19th century, it is impossible to find a piece of meat on the Christmas tables in the Czech Republic, since every table there is headed by a golden carp. Czechs have a tradition of buying two carps on Christmas Eve: one to bake, and the other to release - this is a sign of mercy and good luck for the next year.

And now the recipe itself.

Ingredients:

1 fresh carp weighing up to 1.5 kg
150 ml dry white wine
onions (large head)
carrot
half lemon
150 gr. fresh champignons
70-100 gr. butter
pepper, salt to taste

How to cook:

1. Clean, gut and dry the carp. Cut nothing but viscera and gills. Make incisions along the skin surface.

2. For the filling, finely chop the onion and mushrooms, then fry in butter. After 5-7 minutes, pour in the wine and simmer for another 10 minutes.

If you do not like mushrooms, then you can stew onions with carrots and olives in butter and wine. It also comes out very tasty. Do not forget to salt and pepper.

3. Grate the carp inside and out with salt and ground pepper, sprinkle with lemon juice and brush with melted butter. This is necessary for a golden crust.

Cut the carrots into thin slices and place them in the fish cuts.

4. Now you need to carefully put the filling inside the carp, tightly so that it does not come out during baking. Fasten the edges of the abdomen with toothpicks or skewers.

5. Trying not to damage the stuffed fish, transfer the carp to a greased baking sheet and place in an oven preheated to 180 degrees.

6. Bake for 45 minutes. During baking, you do not need to turn the carp over, the main thing is to water it more often with melted butter to get a golden crisp crust.

For a side dish, you can serve vegetable salad, pickles, boiled potatoes, or whatever you like.
