Soft dough on yeast and fermented milk base does not resist stretching, does not tear, is plastic and suitable for pizza with any filling: from scalding spicy to specific with capers, anchovies or seafood. For best results, use olive oil and sea salt.

Dry yeast - 5 g
Kefir - 180 ml

Step 1 - To knead the yeast dough with pizza kefir at home, take the products on the list. Again, for the characteristic flavor of Italian pizza, it is preferable not to replace olive oil and sea salt. Often there are options with sunflower or corn oil, table salt - of course, the dough will also be kneaded without problems, but the taste of the final dish will become closer to cakes and pies.
Step 2 - Warm the kefir slightly or take it out of the refrigerator a couple of hours before starting work. Mix it with dry yeast granules and keep it near a heat source for about 10 minutes until a foamy layer appears on the surface. Also, the pizza dough can be kneaded with pressed (fresh) yeast. In this case, their portion is increased threefold (instead of 5 g dry, take 15 g fresh / pressed).
Step 3 - Sift the flour: on a countertop or in a wide bowl. Throw in a pinch of sea salt, I like to add the coarse salt without crushing it.
Step 4 - Pour olive oil into the salted flour and grind a little, flakes are partially formed.
Step 5 - Introduce the activated yeast solution and proceed to manual kneading. Knead thoroughly, add additional flour if necessary, but little by little, so that the pizza does not come out hard, excessively dry. Leave the dough slightly sticky. Lubricate the palms with a little oil and roll up a smooth bun. Cover with a towel or film, not too tightly, leave in a warm place for half an hour or an hour. Then we start shaping the product.
We stretch the yeast dough "rested" from the hands directly on the weight or roll it out with a rolling pin, form a cake, grease it with a tasty sauce and collect the semi-finished product.
Pizza is baked in a pre-heated oven for about 20-25 minutes at a temperature of 200 degrees.
