Soup with pickles, chicken and rice

Let's prepare a simple and quick soup with pickles. First courses of this kind are very appetizing, they have a rich aromatic soup, a pleasant thick composition, in a word - the result is gorgeous. You can cook soup both lean and in meat broth, it all depends on your taste preferences.

I suggest you add some tomato paste, among other things. When choosing cereals, you can give preference to rice. Cucumbers must be delicious, crispy, salty. The rest of the composition of this dish is traditional.

Ingredients:

Water - 1.5 l

Chicken - 300 g

Potatoes - 2 pcs.

Carrots - 1 pc.

Bulb onions - 1 pc.

Garlic - 1 clove

Pickled cucumbers - 3 pcs.

Rice - 4 tablespoons

Vegetable oil - 1 tbsp.

Bay leaf - 1 pc.

Tomato paste - 1 tbsp

Greens - optional

Salt, pepper - to taste

Cooking process:

1. Prepare all the necessary foods according to the list. If the broth will be cooked on chicken, choose any part of it - fillet, drumstick, thighs, etc. Choose medium-sized vegetables.

2. Take a saucepan that is suitable for the size of the soup. Pour a portion of clean water into it, shift the chicken and throw the bay leaf. Simmer the chicken broth for half an hour to forty minutes, and remove the foam that forms.

3. While the aromatic broth is boiling, prepare a vegetable mix. Peel potato tubers, wash, dry a little. Cut them into small cubes.

4. Peel the onion and rinse. Crumble it into cubes and transfer to a frying pan greased with vegetable oil.

5. Peel large carrots, wash, chop into shavings with a medium grater. Add it immediately to the pan.

6. Saute the vegetables for 4-5 minutes, with constant stirring.

7. Trim the tails of pickled cucumbers. Slicing can be anything - strips or cubes, you can even grate it on a coarse grater.

8. Tomato paste can be diluted with a little broth or cucumber pickle. Pour the resulting mixture over the cucumbers and vegetables. Stir everything and simmer the dressing for 12-15 minutes over low heat.

9. When the broth is ready, add potatoes and rice to it, cook for 15 minutes.

10. After the specified time, add pickled cucumber dressing from the pan, salt, pepper to the soup, you can add a pinch of sugar for balance. Stir and cook the soup for another 5-10 minutes, then pour into bowls.

Serve pickled cucumber soup with rice and chicken meat hot, if desired, you can season with a spoonful of thick sour cream and chopped herbs.
