For a lean diet or as an addition to meat and fish dishes, we bake vegetable kebabs on wooden skewers in the oven. Charring occurs evenly and simultaneously. Make sure in practice: fast, simple and always delicious.
Ingredients:
Sweet pepper - 3 pcs.
Onions - 1 pc.
Cherry tomatoes - 5 pcs.
Eggplant - 100 g
Zucchini - 100 g
Vegetable oil - 40 ml
Salt, hot pepper, smoked paprika - to taste
Step by step recipe:
Step 1 - To cook vegetable skewers at home, take the foods on the list. You can easily choose a vegetarian set according to your taste, focusing on the season and vegetable stocks in the refrigerator. Add champignons if desired. Also, make your own set of spices: from spicy to hot-hot.
Step 2 - All vegetables are pre-washed, dried. Peel the onion. Cut the eggplants with zucchini into thick circles, leave the miniature cherry tomatoes whole (chop the large tomatoes in half or quarters). For the variegation of the future lean kebab, sweet peppers take several colors (I have three: red, green plus light Belozerka). We cut the peppers into large plates, while removing the seeds, soft internal partitions. All pieces of different vegetables should be about the same weight-size in order to bake evenly. Season the vegetable platter with salt, ground pepper and a very aromatic-smelling smoked paprika. Stir, cover each piece with spices.
Step 3 - Pour in the vegetable oil and mix again. For harsh notes, add wine vinegar, lemon juice. If time permits, leave the seasoned "semi-finished product" in this form on the refrigerator shelf for half an hour or more. Bake just before serving to keep the vegetable kebab fresh from the heat.
Step 4 - Preheat the oven to the maximum. In parallel, we string the oiled vegetables on wooden skewers. We alternate, distribute the slicing in approximately equal proportions - this way each eater will get a shashlik of various texture, aroma and color.
Step 5 - For convenience and even baking, we place the blanks on the sides of the mold. We send it to a hot oven for 20 minutes or a little longer. We bake to the desired degree of charring at a temperature of 200 degrees.
Serve vegetable skewers on wooden skewers to the table on their own or as an addition to meat.
